The concept of "once a month cooking" means you spend a day or two in the kitchen finishing all the dishes, and are left with enough meals that will last you and your family throughout the month. These recipes are prepared, and then frozen, so that the foods can be used when required later on.

Recipes for Breakfast

Egg Sandwiches

Ingredients
  • Eggs, 2 dozen
  • Canadian bacon strips, 2 dozen
  • Bagels, 2 dozen
  • Cheddar cheese slices, 2 dozen
Method

Each breakfast sandwich will contain a bagel, one fried egg, a slice of the bacon strips, and a slice of cheddar cheese. So first off, over a pan, fry the eggs on both sides. Pack them in the order we just mentioned and place them into big freezer bags. To serve the sandwiches, thaw them for at least 20 minutes. Microwave the sandwiches till they are hot and yummy, and serve immediately.

French Toast

Ingredients
  • Cubed French bread or raisin bread, 8 cups
  • Pecans, ½ cup
  • Sugar, ¼ cup
  • Brown sugar, ¾ cup
  • Half and half creamer, ¾ cup
  • Cream cheese, 16 oz.
  • Vanilla, 2 tsp.
  • Sliced green apples, 2
Method

Place the bread cubes in a well-oiled dish and top it with apples. Combine cream cheese, 1 tsp vanilla, ¼ cup half and half, and pecans in a bowl. Spread this mixture over the apples and top off with the rest of the bread cubes. In a different bowl, beat the eggs and add rest of the vanilla and half and half. Pour the liquid over the bread, secure the lid the dish properly, and place it inside the freezer. For serving, enough quantity of French toast for 30 minutes before baking. Bake it uncovered for 35 minutes inside a 350ºF preheated oven.

Vegetarian Recipes

Peas and Onion Soup

Ingredients
  • Frozen peas, 2 packs
  • Chopped mint leaves, 4
  • Chopped onion, 1
  • Chopped celery, 1
  • Vegetable broth, 1 cup
  • Light cream, 1 cup
  • Salt and black pepper, for taste
Method

Cook the peas in hot water until they turn tender. Drain the peas and place them in a blender to make a paste. Along with the cooked peas, blend celery, onion, and vegetable broth till you get a smooth paste. Pour the mixture in a bowl and add light cream, salt, black pepper, and mint leaves to it. Let the paste cool down completely, and then place it inside a freezer bag. On the day of serving, defrost the soup that you've stored inside the freezer. Serve the soup either cold, or you can heat it up a bit in the microwave or on the stove.

Saffron Yellow Rice

Ingredients
  • Saffron strands, 3
  • Rice, 1 cup
  • Onion powder, 1 tsp.
  • Salt, ½ tsp.
  • Garlic powder, ¼ tsp.
  • Turmeric powder, ¼ tsp.
  • Sugar, ¼ tsp.
  • Cumin powder, ¼ tsp.
Method

Combine all the ingredients and keep it in a sealed container. On the day of serving, combine the rice mixture, 2 cups of water, and 1 tbsp. oil, and bring it to a boil over medium heat. Frequently, stir the rice and cook for 20 minutes over low heat. When the rice is done, serve hot.

Chicken Recipes

Chicken Casserole

Ingredients
  • Boneless chicken breast, 3 lbs.
  • Broccoli, 2 lbs.
  • Rice, 6 cups
  • Shredded cheddar cheese, 4 cups
  • Chicken broth cubes, 2
Method

In one pot, steam broccoli with 1 chicken broth cube, and in the other pot, steam rice with the other chicken broth cube. In the third pot, boil chicken breasts till its cooked perfectly. Once ready, drain the liquid out and dice it into bite-size pieces. Mix the cooked broccoli, rice, and diced chicken breasts properly, and add cheddar cheese over it. Combine everything properly and let it cool down thoroughly. Use small freezer bags or a few airtight plastic containers to store the food in. On the day of serving, thaw as many containers as you need, and then microwave it for about 7 minutes.

Teriyaki Chicken

Ingredients
  • Chicken breast, legs, wings, or thighs, 10 pieces
  • Garlic salt
  • Soy sauce
  • Ginger, crushed
  • Water
  • Brown sugar
  • White wine
Method

You will have to measure the ingredients as per your taste preference. In a freezer bag, combine all the ingredients and add the chicken pieces in. Seal the bag and let the chicken marinate properly. Store the bag inside the freezer. On the day of serving, defrost the chicken some time. To cook the chicken, you can either place it over a grill, bake it in the oven, or stir-fry it in a skillet. When the chicken is tender, serve it hot.
