Okra is a healthy vegetable characterized by its unique shape that tapers gradually towards the tip. Commonly known by the name lady finger, okra should be harvested at the appropriate stage, otherwise it hardens and becomes fibrous within a few days. The okra seed pods are rich sources of soluble fiber and diuretic agents. While some people do not like the mucilaginous nature of cooked okra, others crave for okra prepared in this style.
If you do not prefer sliminess of okra, you can reduce it by keeping okra intact and adding acidic ingredients in the recipe. Also, taking a note of the cooking time matters a lot in mastering fresh okra dishes. Quick preparation reduces sliminess of okra, or else, you can try deep-fried okra recipes for an extended period over low heat and wait till mucilage dissolves completely. Following are some methods of cooking okra dishes along with the required ingredients:
Fried Okra Dish
  • 1 pound fresh okra (sliced)
  • 1 medium onion (chopped)
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon ground black pepper
  • 3 tablespoons butter
  • Salt to taste
Directions for Preparation

Preheat a large, nonstick frying skillet over medium heat. Add butter and allow to melt completely. If you are not fond of butter taste, replace it with vegetable oil. Add onion and saute till tender. Stir in okra and cook for a few minutes, while stirring constantly. Then, add the seasoning spices - ginger, cumin, coriander, black pepper and salt. Reduce heat, cover lid and continue cooking for about 20 minutes. Do not forget to stir in between. When okra turns soft and less slimy, you can remove from heat and serve as a side dish.
Frozen Okra Dish
  • 2 (10-oz) packages frozen cut okra
  • 1 medium onion (coarsely chopped)
  • 1 (14-oz) can diced tomatoes
  • 1 fresh habanero chili (pierced 3 times with a fork)
  • 1 tablespoon vegetable oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
Directions for Preparation

For all frozen okra preparations, you will need to rinse okra with hot water. Place it in a colander and wash with hot water. Keep aside and allow water to drain. Preheat a heavy skillet over medium high heat and add vegetable oil. Saute onion till it turns golden brown. Then, stir in tomato (with the liquid part) and cook for 7-8 minutes. By this time, tomato will be softened and the liquid will thicken to about half. Add okra, chili and stir well. Cook for around 5 minutes with constant stirring, until okra is done. Season salt, pepper and other spices (if desired). Stir again for even mixing and remove from heat.
Stir Fry Okra Dish
  • 2 cups fresh okra (cleaned, trimmed and thinly sliced)
  • 1 large tomato (peeled and cut into thin wedges)
  • ¼ cup green onions (chopped)
  • ¼ cup celery (chopped)
  • ½ cup corn
  • ¼ teaspoon leaf thyme (crushed)
  • 1 tablespoon vegetable oil
  • 2 tablespoons butter
  • 1(½) teaspoons fresh lemon juice
  • 1 teaspoon salt
  • A dash of pepper
Directions for Preparation

This healthy, okra recipe is for those who love to have vegetable stir fry dish. Prepare the above listed ingredients as indicated. Take a small bowl and combine together salt, pepper, lemon juice and thyme. Heat oil and butter in thick frying pan and add onion, okra and celery. Stir occasionally and cook for 10 minutes. Add corn, tomatoes and seasoning mixture. Cover lid and cook over low heat for another 15 minutes. Stir-fried okra is ready for serving.
Purchase fresh or frozen okra and cook according to your preferences. You just have to use basic culinary skills and alter the flavoring spices to suit your taste buds.
