Microwave Acorn Squash Recipes

Acorn squash is a type of vegetable, available mostly in the winter months and harvested during the late summer. It is abundant in essential nutrients and can be baked, microwaved, sauteed, or steamed. It may be stuffed with rice, meat, or vegetable mixtures, and also added to soups. It contains high levels of vitamins B and C, and dietary fiber, that is very essential for the human body. Found in a dark green color, it has a sweet taste, and is best eaten after it has been cooked in a microwave. There are a number of recipes available, and they are quite easy to make. Let's look at some of them here.

Classic Acorn Squash

Ingredients
  • Acorn Squash, 1
  • Butter, 1 tbsp.
  • Brown Sugar, 1 tsp.
Method
Cut the vegetable lengthwise into half. Remove all the seeds and place the cut side in a baking dish. Add very little water to the baking dish and cover the squash with a plastic wrap. Place the baking dish in the microwave and bake for around 10 minutes. Then, remove the dish from the microwave and place the cut side, facing up. Place the butter and a teaspoon of brown sugar in the cavities and microwave for around 2 more minutes.

With Honey and Pepper

Ingredients
  • Acorn Squash, 2
  • Brown Sugar, ¼ cup (packed)
  • Butter, 2 tbsp.
  • Honey, 4 tsp.
  • Salt, ¼ tsp.
  • Pepper, ¼ tsp.
Method
Cut the vegetable lengthwise into half. Remove all the seeds and place the cut side in a baking dish. Bake for around 10 minutes until the squash turns tender. Then, remove the dish from the microwave and place the cut side, facing up. Fill the cavities of the squash with the brown sugar, honey, pepper, butter, and salt, mixed in equal proportions. Cover the squash pieces with a plastic wrap and microwave for 3 minutes. Remove and serve.

With Cranberry Filling

Ingredients
  • Acorn Squash, 4
  • Butter or Margarine, 8 tbsp.
  • Honey, 8 tbsp.
  • Whole Berry Cranberry Sauce, 16 oz.
  • Salt, to taste
Method
Cut the vegetable lengthwise into half. Remove all the seeds and place the cut side in a baking dish. Bake for around 15 minutes until they are tender to touch. Remove from the microwave and let it cool for 5 minutes. Place the cut side facing upwards and sprinkle some salt over both the cut pieces. Fill one of the cavities with a tablespoon each of butter and honey. Repeat the same with the other half of the squash. Place this in the microwave and heat for 4 minutes. Remove and place a tablespoonful of warm cranberry sauce in each of the cavities. Place it in the microwave and bake for around 6 minutes. Remove and serve.

With Beef Stuffing

Ingredients
  • Acorn Squash, 2 (1 to 1½ lbs.)
  • Ground Beef, 1 lb. (lean)
  • Onion, ½ cup (chopped)
  • Celery, ¼ cup (chopped)
  • Clove Garlic, 1 (minced)
  • Tomato, 1 can (16 oz., whole, drained, and chopped)
  • Oregano, 1 tsp.
  • Egg, 1 (slightly beaten)
  • Rice, 1 cup (cooked)
  • Salt, 1 tsp.
  • Pepper, ½ tsp.
  • Cheddar Cheese, 1 cup (grated)
Method
Wash the squash and pierce it several times with a fork, making several small holes on the squash. Place this in the microwave and bake for around 15 minutes on High. After 7 minutes, turn the squash over to the other side and cook for another 7 to 8 minutes. Remove from the microwave and set aside to cool. In a bowl, crumble the beef and add to it, the onions, celery, oregano, pepper, garlic, and salt. Place this in the microwave and heat for 5 minutes. Then, add the rice, tomatoes, and egg, and set aside. Cut the squash lengthwise into half and remove all the seeds. Fill the squash with the meat mixture and microwave for around 10 minutes. Garnish with cheddar cheese and serve.
