A fondue is a unique and easy-to-prepare dish that can also be used as an accompaniment with meals. The term fondue is actually derived from a French word, fondre, which means to melt. Meat fondues were present since the Middle Ages. Beef, horse meat, and chicken were used as the main ingredients in it. Since ancient days till date, meat fondue recipes have been devised in various ways to create some lip smacking dishes. Such dishes are also accompanied with a variety of sauces.
Recipe 1
  • Vegetable or peanut oil
  • Beef tenderloin

First, trim the fat and cut the beef into ¾-inch pieces. Blot them with the help of a paper towel and place them in the fridge. Meanwhile, heat some oil in a pan. Once heated, fill the fondue pot halfway with it. Then, with the help of a fork, place the beef chunks in it. Cook the meat for at least a minute if you want it well done. Once done, remove the meat with the fork and place it in the plate. Serve this fondue with sauces of your choice.
Recipe 2
  • Vegetable oil, 15 ml
  • Water, 8 cups
  • Beef bouillon cubes
  • Garlic clove (crushed), 1
  • Onion (finely chopped), 1
  • Tomato (finely chopped), 1
  • Salt, ½ teaspoon
  • Bay leaf, 1
  • Red wine, 1 cup
  • Freshly ground pepper, ½ teaspoon
  • Celery stalk (finely chopped), 1

Take a large pot and warm some oil in it. Add the onion and garlic to it till it turns soft. Follow this by adding the water and let it come to a boil. Now, add the beef bouillon cubes to this preparation and lower the heat. Then, add the vegetables along with the spices and stir in the wine. Cook the same over low heat for about 3 hours. Keep a check at regular intervals and keep adding water as needed.
Once done, filter the broth and place it in the refrigerator. Before you serve the same, remove the fat that has hardened on the surface area and warm up the broth in a fondue pot by adjusting the heat accordingly. Then, roll one piece of beef on the fondue fork and cook it for few minutes till it turns tender. Repeat the procedure with the rest of the beef.
Recipe 3
  • Soy sauce, ¾ cup
  • Garlic cloves (minced), 2
  • Worcestershire sauce, ¼ cup
  • Beef tenderloin (1-inch cubes), 2½ pounds
  • Pork tenderloin (1-inch cubes), 2½ pounds
  • Vegetable oil, 2-3 cups
For the Horseradish Sauce
  • Sour cream, 1 cup
  • Vinegar, 1 teaspoon
  • Salt, ½ teaspoon
  • Pepper, ¼ teaspoon
  • Prepared horseradish, 3 tablespoons
  • Onion (chopped), 1 tablespoon

Take a large plastic bag that can be resealed again and place the meat along with the soy sauce, garlic, and the Worcestershire sauce in it. Seal it and place it in the refrigerator for 4 hours. You can also keep turning it at regular intervals.
Take a small bowl and combine all the horseradish sauce ingredients in it. Cover the bowl, and place it in the refrigerator as well. Meanwhile, drain and discard the marinade and pat the meat dry with some paper towels. Heat the oil in a fondue pot. With the help of fondue forks, cook the meat in the oil as per your requirement. Serve the same with the horseradish sauce.
