Pancakes made of mashed potatoes are one of the best meals you can dish out, especially with leftovers.

  • Potatoes (mashed), 1 cup
  • Egg (lightly beaten), 1
  • Garlic (minced), ¼ tsp.
  • Ginger (chopped), ¼ tsp.
  • Italian seasoning, ½ tsp.
  • Vegetable oil, 1 tbsp.
Mix the mashed potatoes with the ginger, garlic, seasoning, and eggs in a bowl. In a heavy skillet, heat the oil. Meanwhile, make golf ball-sized balls of the mashed mixture, place them in the skillet, and flatten them evenly with a spatula. Let the pancakes turn brown and crispy on both the sides, and serve hot with a sauce of your choice.
