Flank steak is a lean, firm cut of beef from the flank of the cow. It is the fleshy and well-exercised part, between the ribs and the leg of the cow. It is boneless, bright red in color and extremely flavorful. Flank steak is usually thinly sliced and cooked at medium rare. One of its most peculiar feature is that before cooking it is marinated using various tenderizing liquids like lemon juice, tomato-based products, vinegar, wine, pineapple and ginger which adds to its tenderness and brings a saporous taste.

Marinated Flank Steak Recipe

Ingredients
  • 1½ pounds flank steak
  • 1½ tbsp Worcestershire sauce
  • ¼ cup red wine vinegar
  • ½ cup vegetable oil
  • ⅓ cup soy sauce
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • ½ tsp ground black pepper
Directions

Take a bowl and mix the oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, mustard, garlic, and ground black pepper. In a shallow glass dish, place meat and pour the prepared marinade over it, turning the meat to coat thoroughly. Cover and the refrigerate for 6 - 7 hours. Preheat grill for medium-high heat and coat the grill grate with oil. Place the steaks on the grill, cook for 5 - 6 minutes on each side. The best technique to check whether the steak is done or not is to poke it with your fingertips. If it is raw, it will be quite squishy and then cook for some more time until the muscles contract and firm up. Once cooked and serve this delicious recipe with your favorite sauce.

Grilled Marinated Flank Steak Recipe

Ingredients
  • 2 pounds flank steak
  • ⅓ cup olive oil
  • 2 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • ⅓ cup soy sauce
  • ¼ cup honey
  • Freshly grounded black pepper
  • Kosher salt
Directions

Mark the surface of the steak with ¼ inch deep knife cuts, about an inch apart. In a bowl, combine olive oil, garlic, red wine vinegar, soy sauce, honey and ½ tsp of black pepper. Coat the steak well with the marinade and keep in a large freezer bag. Seal the bag and refrigerate for 2 - 3 hours or up to overnight. Using olive oil soaked onto a paper towel, coat the grill grate with olive oil and preheat the grill at medium high heat. Once it is hot, remove the steak out of the marinade bag and sprinkle all over with freshly ground pepper and salt. Grill for 4 - 6 minutes on each side and half way through grilling on each side, turn the steak 90° to get more grill marks. When the steak has been cooked, remove from the grill and keep on a cutting board. Cover with aluminum foil to hold in the heat and to keep the steak from drying out, and then allow it to rest for 10 - 12 minutes. Make thin slices, against the grain, and serve hot either with the excess marinade by bringing it to a boil and then simmering for a few minutes or with salsa or horseradish sauce.
