For the second most important meal of the day, here is a compilation of some tasty, healthy, quick and easy luncheon menu ideas for you and your family.
Lunch recipes must not only be mouth-watering, but also be healthy and time saving. The menu can have anything, starting from healthy sandwiches to egg recipes, vegetable side dishes and lunchtime desserts. Whatever be the recipe, it must not only be wholesome, but must be nutritious as well. On that note, a few luncheon menu ideas are provided for you.

✹Baked taco sandwich.
✹Roast beef, brie and lettuce baguette.
✹Greek salad (hard-boiled eggs, chicken or seafood).
✹Tuna fish, greens, tomato and avocado salad.
✹Dirty rice, green salad and Kielbasa sausage (spicy, smoked Polish sausage).

Recipe - #1

  • Ranch-style salad dressing - 4 tbsp.
  • Sesame seeds, toasted - 4 tbsp.
  • English muffins, split and toasted - 4
  • Alfalfa sprouts - 1 cup
  • Tomato, chopped, small - 1
  • Sweet onion, chopped, small - 1
  • Avocado, mashed - 1
  • Smoked Cheddar cheese, shredded - 1 cup
First of all, preheat the oven. Thereafter, get a cookie sheet and fill it with the muffins; each open-faced. Spread the halves with the mashed avocado. Then, cover the muffins with tomatoes, cheese, sesame seeds, alfalfa sprouts, onion, and dressing. Place the mix in the oven until the cheese melts.

Recipe - #2

  • Imitation crab meat - 1 pound
  • Mayonnaise - 1 cup
  • Tri-color pasta - 8 ounces
  • Celery, stalks - 3
  • Green peas, frozen - 1 cup
  • White vinegar - 2 tbsp.
  • Milk - 1 tsp.
  • Salt - 1 tsp.
  • Sugar - 1 ½ tbsp.
  • Ground black pepper - ¼ tsp.
Add some salt to a large pot of boiling water, add pasta and cook for 10 min. Rinse and drain the pasta with cold water. Chop the celery and the meat, defrost the peas. Mix the mayonnaise, sugar, vinegar, milk, salt, and pepper in a separate bowl. Add the cooked pasta, celery, and meat to this mixture and stir well. Before serving refrigerate it.

  • Turkey or chicken - 6 pieces
  • Lettuce - 1 cup
  • Mozzarella cheese, shredded - 1 cup
  • Ranch dressing
  • Tomato-basil tortilla bread
Laying the tortilla bread flat, put in the meat slices followed by the cheese on top. Stuff it in the microwave, and cook for 1 minute or until the cheese melts. Then, add the lettuce and the dressing. Roll the wrap and serve hot.

  • Tuna, drained - 1 can
  • Chinese noodles - 1 cup
  • Cream of mushroom soup - 1 can
  • Cashews, broken - ½ cup
  • Celery, chopped - 1 cup
  • Onion, chopped - ½ cup
  • Water - ¼ cup
Preheat the oven at 375°F. All you have to do is, take all the ingredients in a casserole dish and toss lightly. To finish, add one more cup of noodles on top. Bake for 15 - 20 minutes and voila! You have a healthy lunch at your table.

  • Egg - 1
  • Cheddar cheese - ¼ slice
  • Melted butter - 1 tsp.
  • Bacon - 1 slice
350°F is the temperature to preheat the oven at. Cook the bacon slice in a deep skillet, preferably large. Cook until evenly brown. Wrap this cooked slice around the inside of the muffin cup. Add butter to the muffin cup and drop in the egg. Bake for 10-15 minutes. Thereafter, place the cheese over the egg. Continue cooking until the cheese melts.

  • Semisweet chocolate chips - 1 cup
  • Milk chocolate candies, candy-coated - 1 cup
  • Chocolate cake mix - 18 ounces
  • Instant chocolate pudding mix - 4 ounces
  • Milk - 2 cups
Prepare the pudding with milk as directed here. Add the cake mix and stir in the chips. Preheat the oven at 350°F. Pour the batter into the pan and sprinkle with candies. Bake for 25 - 30 minutes. Cool it prior to cutting cubes and serve.
