Lobster rolls
Lobsters, especially the ones from the coast of Maine, are world-famous for their rich taste, succulent meat, and tangy flavor. A major reason for their overwhelming popularity is that they can be cooked in many ways, making them a truly global dish. One can have a full-fledged dinner including lobster salads, soups, crepes, stew, dips, rolls, barbecued tails, and even pie.

Barbecued Maine Lobster Tails

Ingredients:
  • Maine Lobster Tails, 6 (frozen and medium-sized)
  • Butter, ½ cup
  • Lemons, 2
  • Ketchup, 2 tbsp.
  • Parsley, ½ tbsp. (fresh and finely chopped)
  • Soy Sauce, 2 oz.
  • Oregano, ½ tsp.
  • Paprika
Procedure:
Skewer the tails along their length and place them over the grill. Cook them for around 8 minutes during which they should turn bright red. During this time, observe the meat color. Once it changes from translucent to white, it has been fully cooked. Meanwhile, mix the remaining ingredients into a small pan and sauté them over a low flame. Pour this mixture into a small bowl. Remove the tails from the grill and place them onto a platter. Sprinkle the above mixture evenly on the tails to enhance their flavor.

Maine Lobster Stew

Ingredients:
  • Maine Lobsters, 4 (medium-sized)
  • Milk, 6 cups (hot)
  • Butter, 4 tbsp.
  • Cream, 2 cups (thick)
  • paprika
  • Salt and Pepper (as required)
Procedure:
Boil the lobsters for 20 minutes. Remove and spread them on a large platter for faster cooling. After this, remove the meat from the shells and chop it into medium-sized square cubes. Add butter and the cubes into a cooking pot and fry them until the meat color turns light brown. Add milk to this mixture, and cook for 8-10 minutes on a low flame. Keep stirring to make sure that it becomes consistent. Add cream and let it cook until the mixture is just about to boil. Add paprika, salt, and pepper as required. Decrease the flame and let the mixture simmer for a while before serving.

Lobster Salad

Ingredients:
  • Lobster Meat, 12 oz. (cooked)
  • Mayonnaise, ½ cup
  • Onion, ¼ cup (chopped)
  • Cucumber, ¼ cup (diced)
  • Lemon, 1 (sliced)
  • Lime Juice, 2 tbsp. (fresh)
  • Celery, ¼ cup (chopped)
  • Bell Pepper, ¼ cup (chopped)
  • Hot Pepper Sauce, 1 tsp.
  • Salt and Pepper (as required)
Procedure:
Mix the meat, onion, cucumber, celery, and bell pepper in a medium-sized salad bowl. Pour the mayonnaise into a small bowl; add the fresh lime juice and hot pepper sauce to it. Using an egg beater, beat this mixture till it becomes smooth and consistent. Pour it over the meat and mix it well. Add salt and pepper as per taste. Refrigerate the salad for an hour. Garnish with lemon slices and serve chilled.

Lobster Rolls

Ingredients:
  • Lobster Meat, 1½ lbs. (cooked)
  • Hotdog Rolls, 4
  • Butter, 1 tbsp. (softened)
  • Mayonnaise, 2 tbsp.
  • Onions, 2 (green and chopped)
  • Lime Juice, 1 tsp.
  • Lettuce Leaves, 5 (fresh)
  • Hot Pepper Sauce, 1 tsp.
  • Celery, ½ cup (finely chopped)
  • Basil, 1 pinch (dried)
  • Salt and Pepper (as required)
Procedure:
Cut the meat into square cubes. In a medium-sized bowl, add mayonnaise and pepper sauce, and stir well until the mixture becomes smooth. Add celery, green onions, and meat cubes to this mixture. Mix the ingredients well. Add salt and pepper as per taste. Apply the softened butter evenly on the inner surface of the hotdog rolls. Arrange the meat stuffing inside the rolls and top it with lettuce leaves. Garnish with dried basil and serve.
