Ingredients
  • 2 - Leeks (small size)
  • 1¼ lb - Diced potatoes
  • 4 - Sprigs of thyme
  • 2 - Bay leaves
  • 2 strips - Bacon (chopped)
  • 20 - Black peppercorns
  • ½ cup - Crème fraiche
  • 2 tablespoons - Butter
  • 2 tablespoons - Snipped chives
  • ½ cup - White wine (dry)
  • 5 cups - Chicken stock
  • ¾ teaspoon - White pepper
  • 1½ teaspoons - Salt
Preparation
Take the leeks, wash them and trim the green portion. Take a cheesecloth and place the trimmed green portion of leeks, bay leaves, thyme, and black peppercorns in it and keep it aside. Now take the white portion of leeks and cut them along their length to get equal halves. Wash these halves with cold water and chop them evenly. Place a pot on medium flame and add butter to it. Chop the bacon and add it to the melting butter. Stir occasionally. Once the bacon is done, add chopped leeks in the pot and cook for five minutes or so. Next, add the mentioned quantity of white wine in the pot and leave till the contents start boiling. Add the cheesecloth containing other ingredients, potatoes, chicken stock, pepper, and salt to taste. Let the contents of the pot simmer for about 30 minutes till the potatoes and other ingredients are cooked. Remove the cheesecloth from the pot and pour the contents in a blender and blend well to get a uniform puree. Before serving, add some crème fraiche, garnish with snipped chives and serve hot.

Ingredients
  • 4 - Potatoes
  • 3 - Leeks
  • 1 qt. - Chicken stock
  • ½ cup - Light cream
  • ¼ cup - Butter
  • ½ cup - Milk
  • ⅛ teaspoon - Celery seeds
  • 2 tablespoons - Celery and shallots (chopped)
  • ¼ teaspoon - Chervil (chopped)
  • Parsley
  • Croutons
Preparation
Peel the potatoes and cut them into quarters. Wash the leeks and remove the green portion. Finely chop the white portion of the leeks and keep them aside. In a pot, add the required quantity of butter and let it melt. Then add shallots and white portion of the leek, and cook till the color turns light brown. Then add diced potatoes, chicken stock, salt, and celery and cook them for 20-25 minutes or till the potatoes are cooked properly. Separate leek and potatoes in a container and mash them evenly using a potato masher. Add mashed potatoes and leek to the stock again and stir in cream along with milk and cook for about 2 minutes. Add the required amount of salt, pepper, and chervil in the soup and garnish with parsley. Adding croutons in the soup can also add to the flavor of the soup.

Ingredients
  • 2 - Leeks
  • 600 gm - Potatoes
  • 35 gm - Butter
  • 1 - Onion
  • 2 cloves - Garlic
  • 1 tin - Evaporated milk (375 ml)
  • 3 cups - Chicken stock
Preparation
Chop the white portion of leeks, dice the potatoes and keep them aside. Add butter to a soup pot along with leeks, crushed garlic cloves, and sliced onions and cook for 10 minutes. Then add diced potatoes in the pot and cook further for 5 minutes or so. Add chicken stock to the contents of the pot and let them cook for 20-25 minutes or till the potatoes are soft and tender. Once potatoes are done, shift the pot contents to a blender and blend well to form a puree. Place this puree again on flame, and add milk and seasoning to it. Bring the contents to boil after which the soup is ready to be served.
