Moreover, this healthy food aids in digestion and is a great addition to your diet if you are suffering from an upset stomach. It has also been found that people having porridge have less cholesterol and are less likely to suffer from heart diseases.
How to Make Porridge From Oats
  • 1 cup steel cut oatmeal
  • 2 cups water
  • ¼ cup brown sugar
  • ¼ cup sweetened condensed milk
  • 4 tablespoon sugar vanilla flavoring (2 drops)
  • 1 pinch nutmeg
  • A pinch of ground cinnamon

To make creamy oatmeal porridge, let the oats soak in water overnight. In the morning, combine the soaked oatmeal with two cups of water. Now in a small, heavy-based saucepan, allow the oats to cook. Stir in the milk and add the vanilla flavoring and the ground cinnamon to the porridge. Keep stirring it continuously for 3-5 minutes until thick.
Top it with nutmeg, honey, or whatever flavors you may want to. Some of my favorite toppings include vanilla yogurt, chopped pistachios and honey, or grated granny smith apples on top of the porridge, along with ground cinnamon or mixed spice sprinkled over it. In addition, you can top up the bland porridge with a mix of chopped bananas, dates, and pecans along with some maple sauce.
How to Make Porridge From Rice
  • ½ cup long-grain white rice
  • ½ teaspoon salt
  • 1 tablespoon peanut oil
  • 4 cups water
  • 4 cups chicken stock
For Topping
  • ¼ pound good-quality tuna, striped bass or sea bass
  • 1 ½ teaspoons peeled and finely slivered fresh ginger
  • 2 teaspoons light soy sauce
  • Big pinch of ground white pepper
  • 1 teaspoon Asian sesame oil
  • 1 tablespoon chopped green (spring) onion
  • 2 tablespoons coarsely chopped fresh cilantro

Rice porridge is an integral part of Asian cuisines from the Thai Congee to the Chinese rice porridge. While making it is quite simple, a number of amazing toppings can jazz up this bland meal to quite an extent. For making this yummy Chinese pudding, rinse the rice with cold water until the water runs clear and then drain.
In a large saucepan, add the rice along with some salt and oil. Now add some of the chicken stock and water to the pan. Bring the ingredients to a boil over high heat, set the cover ajar, and let it boil gently for 5 minutes. Reduce the heat and cover the pan. Let the porridge simmer while you stir continuously. Do this until the rice is soft and then keep warm.
For the topping, cut the frozen fish into thin slivers and arrange on a serving plate. In a small bowl, mix together the ginger, soy sauce, pepper, and sesame oil; pour over the fish. Sprinkle the green onion and cilantro over the top. Now ladle up the porridge in the bowl and set the slices of fish and other toppings for each serving.
How to Make Cornmeal Porridge
  • 1 cup yellow cornmeal
  • 4 cups water
  • ½ cup sweetened condensed milk
  • 2 tablespoon sugar
  • ¼ tsp. nutmeg (ground)
  • ¼ teaspoon cinnamon (ground)
  • vanilla flavoring (2 drops)
How to Make
In a large bowl, add the cornmeal and then pour enough water to cover it fully. Use a fork to mix the cornmeal in water. In a large saucepan, heat four cups of water and bring it to a boil. Reduce the heat to medium and slowly pour the cornmeal mix into the saucepan. Stir continuously for three minutes to avoid forming lumps. Cover and let the porridge simmer for twenty minutes.
Meanwhile keep stirring. Add the milk, half and half, sugar, cinnamon, and the vanilla flavoring. Stir and allow it to simmer for some time. Turn off the heat and ladle up the porridge in small bowls. Serve with ground nutmeg sprinkled on top. In addition to this, you can also replace the sugar with the honey and the half and half with some delicious coconut milk.
