Making the Perfect Ravioli at Home

Preparing ravioli from the scratch goes through 3 stages, first preparing the filling, then the pasta dough and last molding it into the perfect ravioli shape. What follows next is the ravioli recipe in three different stages.

Ingredients
  • 2 cups flour
  • 1-2 cups warm water
  • 3-4 eggs
  • 1 tablespoon salt
  • 2 cups grated ricotta cheese
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons of herbs (oregano, nutmeg and basil)
  • Freshly chopped parsley
Equipment
  • Rolling pin
  • Ravioli maker
Filling
Empty the cup of grated ricotta cheese in a big bowl, to it add freshly chopped parsley, a pinch of salt to taste and a dash of nutmeg, oregano and basil. Mix all the ingredients properly. Your filling is ready. Now, in case you plan to experiment with the filling, you can add finely chopped and cooked meat. For veggie lovers finely chop vegetables of your choice and sauté them in the frying pan with a ting of butter. You can also have smoked salmon and cooked shrimp as your filling. Make sure you add a little cheese to your variation, as cheese is the ingredient that completes most of the Italian dishes, so it ought to be there. Once you are done with preparing the filling, keep it aside and get on to make the pasta dough.

Dough
In a large mixing bowl, crack 3 eggs and beat them until fluffy. To these beaten eggs add 2 cups of flour and a little salt to taste. Knead the mixture into a soft dough. Once your pasta sheet is ready, place it on the ravioli maker tray and dust a little flour on it. Now, place the ravioli press over gently, to create small dents. In these dents, goes your yummy filling! Now, roll out the other half of the dough in the same pattern as the first one and place it on top of the filling. Make sure there are no air pockets. You can use your fingers to press out air pockets, if any.

Press the top layer of the dough using a rolling pin, you can actually see the zig zags on the ravioli maker then. This is what separates each ravioli. Now, flip the ravioli tray and pop the raviolis out. Place these raviolis on a baking sheet and allow it to stand for an hour or two. After an hour you can pack it in an air tight container or bag and refrigerate it. In case you plan to eat it right away, add the raviolis to a large pot of boiling water, add a little vegetable or olive oil, so that the raviolis do not stick to each other. Boil for 10 minutes. Make sure the ravioli has been cooked properly before you drain the water out. Your ravioli is ready! Just toss it with your favorite sauce and let these heaven tasting raviolis melt in your mouth!
