Onion Rings made without a Deep Fryer

Ingredients
  • 1 large Bermuda onion
  • 1 egg (yolk and white separated)
  • 1 cup all-purpose flour, sifted
  • ⅔ cup milk
  • 1 tbsp. salad oil
  • 2 tsp. salt
  • 1½ tsp. baking powder
  • Shortening or oil for frying
Peel and slice the onions in about ¼" thick slices. Separate into rings. Put the slices in water for about 30 minutes. After 30 minutes, drain the water and spread the rings on paper towels. Now, sift salt and baking powder into into a bowl and keep aside. In another bowl, beat the egg yolk, add milk and salad oil, and stir well. Add this mixture to the flour mixture; stir until it becomes smooth. Now beat the white egg until stiff peaks form. Mix it into batter and keep aside. Heat about an inch of shortening in a saucepan to a temperature of 190ºC. Dip the onion rings into the batter and drop them into the hot pan and fry till they turn golden.

Onion Rings made in an Oven

Ingredients
  • 1 medium sweet onion
  • 1 large egg
  • 1½ cups cornflakes
  • ½ cup plain dried breadcrumbs
  • ½ cup low-fat buttermilk
  • ¼ cup all-purpose flour
  • 2 tbsp. vegetable oil
  • ¼ tsp. cayenne pepper
  • Coarse salt and ground pepper to taste
Preheat the oven to 450º. Add cornflakes and breadcrumbs to a food processor and grind until you get fine crumbs. Remove it in a bowl. In another bowl, whisk buttermilk, egg, cayenne, flour, salt, and pepper. Dip the onion rings in the egg mixture, drip off the excess mixture, and dredge them through the cornflake mixture. Place the rings on a wire rack. Now place parchment paper on a rimmed baking sheet, use a spoon to spread the oil on the parchment paper, and place it in the oven; heat for 2 minutes. Then, remove the sheet from oven and discard the parchment paper. Put the rings on the sheet and bake them for 20 minutes, turning them once.

Onion Rings made in a Deep Fryer

Ingredients
  • Onions
  • Eggs(s)
  • Flour
  • Vegetable Oil
Fill the deep fryer with oil, as per the manual and heat. Make onion rings as stated above. Now beat one egg in a bowl and blend. Coat the onion rings with the egg wash. Dredge the rings through the flour and place them in the frying basket. Lower this frying basket into the heated oil. When the onions turn golden brown, remove them put onto a paper towel. Sprinkle salt.

Onion Rings Without Eggs

Ingredients
  • 2 sweet onions
  • 1 cup unbleached all-purpose flour
  • 1 cup vegan buttermilk
  • A pinch cayenne
  • Salt and freshly ground pepper
  • Vegetable oil for frying
Add cayenne and buttermilk in a bowl and add the onion rings to the mixture. Let it soak for about 15 minutes. Now heat an inch of vegetable oil in a pan. Put flour, pepper, and salt in a re-sealable bag. Add the rings and shake the bag well. When the oil is hot, add a few rings to the pan. Do not overcrowd the pan. Fry for about 2 minutes or till they turn golden brown. Drain on paper towels.
