Egg salad is a traditional type of cold salad which is very popular. It can be consumed as such, or can be used as a sandwich spread. Apart from hard-boiled eggs, it contains various herbs, spices, and vegetables. Different versions of egg salad can be made with ingredients of your choice. There is no hard and fast rule regarding the quantity and choice of the ingredients. However, as the name rightly suggests, the basic ingredient of this dish is boiled eggs.
Egg Salad with Bacon
  • Hard-boiled eggs - 5
  • Cooked bacon slices - 2 medium (chopped)
  • Garlic aioli - 50 ml
  • Chopped parsley - 1 tbsp.
  • Diced green onion - 1 tbsp.
  • Diced shallots - 2 tbsp.
  • Minced garlic - 3 cloves
  • Lemon juice - 1 tbsp.
  • Beaten egg - 1 medium-sized
  • Olive oil - 120 ml
  • Pepper powder - ½ tsp.
  • Salt - as per requirement or ½ tsp.
How to Prepare
Boil the eggs. In order to get the perfect hard-boiled eggs, you have to cook them in boiling water at low heat for around ten minutes. Once done, transfer these eggs to a bowl with ice-cold water. After three to four minutes, remove and peel the eggs, and keep them aside. In a large mixing bowl, break the boiled eggs to small pieces. You may also use an egg slicer to chop the boiled eggs to small chunks. Add the diced green onions, diced shallots, chopped bacon, and chopped parsley.
Prepare garlic aioli (garlic mayonnaise) by mixing the beaten egg, minced garlic, lemon juice, chopped parsley, pepper, and olive oil. Beat the contents till the mixture becomes soft and creamy. Once the garlic aioli is ready, pour it to the bowl with chopped eggs. Fold in the contents of the bowl very gently, so that the ingredients are not mashed. Once they get mixed in an even manner, keep the egg salad in the refrigerator. Take it out only before serving.
Egg Salad with Mustard
  • Hard-boiled eggs - 8 to 10
  • Cooked and cubed chicken - 1 cup
  • Dried cherries - ½ cup
  • Walnuts - ½ cup (optional)
  • Chopped celery - 1 cup
  • Mayonnaise - ¾ cup
  • Milk - ¼ cup
  • Prepared mustard - 1 tbsp.
  • Dill or rosemary - 1 pinch
  • Salt and pepper - as per taste
How to Prepare
Hard boil the eggs, and keep three of them aside. Peel and chop the others. Take a large bowl and mix the chopped eggs, dried cherries, walnuts, chicken cubes, celery, salt, and pepper. Mix milk and mayonnaise in another bowl, along with prepared mustard and dill (or rosemary). Pour this mixture into the first bowl. Mix the contents and add extra mayonnaise if you find the salad too dry. Garnish the egg salad with egg slices (use the eggs that were kept aside).
