  • Flour, 10 oz. (plain, sifted)
  • Butter, 8 oz. (softened)
  • Caster sugar, 4 oz.
  • Poppy seeds, 2 tbsp.
  • Begin by preheating the oven at 375 °F (170 °C).
  • Loosely commingle the poppy seeds with the flour in a bowl.
  • In a separate large, clean glass bowl, add the sugar and the butter and cream the two using a hand mixer until a fluffy, creamy concoction is formed.

  • Now add the dry ingredient mixture to the creamed mixture.
  • Next, use your hands to knead the mixture to prepare the dough.

  • Once you have a smooth, soft, and even dough, cut a tiny chunk from it with a knife and roll it between your palms to form a walnut-sized ball. Repeat this until you have approximately 30 cookie balls and no more dough left.
  • Now, lightly grease two baking sheets with cooking spray or line it with wax paper.
  • Press each cookie ball lightly between your palms before placing it on the sheet. Repeat this action with all the balls.
  • Maintain a 2" gap between cookies on the sheets.
  • Place the sheets in the oven and bake for 15 minutes solid. You will see that the color has changed to golden-brown.
  • Remove the sheets from the oven and transfer the cookies onto a wire rack for cooling for 15 odd minutes or so and voila!

Note: Instead of the poppy seeds, you can add about 75 grams of chocolate chips or finely grated zest of either an orange or a lemon to the flour.
Basic Cookies with Eggs from Scratch
Eggs are basically added to bind and moisten the cookie dough better. They offer proteins and binding lecithin to the dough thus keeping it from falling apart and strengthening it texturally. The egg whites act to make the cookies firmer post-baking. However, vegetarians can always go for the recipe given above. There are boons of using eggs in cookies, but that doesn't mean that they are indispensable.
  • Egg, 1
  • Flour, 5.3 oz.
  • Sugar, 4.4 oz.
  • Butter, 4.2 oz.
  • Vanilla essence, 1 tsp.
  • Baking soda, ½ tsp.
  • Salt, ½ tsp.
  • Chocolate chips
  • First blend butter and sugar until fluffy and creamy.
  • Add egg and vanilla essence to the mixture. Stir the mixture and blend it well.
  • Commingle the flour and baking soda. Then add salt.
  • Mix this dry mixture with the butter mixture and blend well.
  • Add the chocolate chips to the dough and stir thoroughly. Refrigerate for ½ an hour.
  • Now apply a layer of oil on a baking tray.
  • Cut a tiny chunk from the dough with a knife and roll it between your palms to form a 1" ball. Repeat this until you have no more dough left.
  • Press each cookie ball lightly between your palms before placing it on the sheet. Repeat this action with all the balls.
  • Maintain a 3" gap between cookies.
  • Preheat the oven for 2 - 3 minutes at 374 °F (190 °C) and then bake the cookies for 8 - 10 minutes.
  • Take it out once they get baked uniformly and serve either hot or cold.
