Making Chocolate Mousse from Scratch

Ingredients
  • 100g dark chocolate (70% cocoa solids)
  • 50g caster sugar
  • 300ml double cream
  • 1 egg white
  • 2 tablespoons, Amaretto or other liqueur
  • White or dark chocolate shavings (to garnish)

Start by chopping the chocolate into small pieces. Next, pour half the cream into a small saucepan, and heat it till it begins to boil. Take it off the heat, and add the chocolate pieces to it. The chocolate will gradually melt. Keep stirring. Place a medium-sized bowl over another large bowl of iced water and pour the chocolate mixture into the medium bowl. Add the remaining cream and liqueur to it. Whisk the mixture while the bowl is still placed in the iced water with an electric blender until it becomes stiff. Take the bowl out of the iced water. In a separate bowl, beat the egg whites with the electric blender and gradually add the sugar. Gently stir the egg white into the chocolate mixture, and them pour into chilled martini glasses. Sprinkle each glass with chocolate shavings and serve.

Chocolate Mousse Cake Recipe

Ingredients
  • 1 tablespoon, instant coffee
  • 1 cup, chopped walnuts
  • 3 tablespoons, butter
  • 6 tablespoons, flour
  • 8 eggs (separated)
  • 16 ounces, semisweet chocolate chips (melted)
  • 1 cup, sugar
  • 1 teaspoon, vanilla
  • 1 tablespoon, brandy
  • Whipped cream (for garnish)

Preheat the oven to 400 °F. Grease a 9'' springform pan with butter and sprinkle flour in it. Melt the butter in a pan placed over hot water. Stir the instant coffee into the melted butter. In a large bowl, whisk the egg whites until it turns stiff. Whisk the egg yolks in the blender until they turn pale yellow. Add sugar to the egg yolks and blend again. Transfer the contents to a large bowl and add the brandy, vanilla, melted butter, and chocolate to it. Add a tablespoon of flour to the mixture, at a time, whisking in between. Finally, add the egg whites and walnuts to the mixture. When you have a smooth batter, pour it into the prepared pan and bake for 20 minutes. The center will remain soft.   • 3¾ cups, whipping cream (chilled)

To make the crust, preheat the oven to 350 °F. Grease a 9'' springform pan with butter and sprinkle it with flour. Crumble the cookies into a food processor and grind them. Add the butter and whirl until evenly combined. Transfer the crumb mixture to the prepared pan, and spread it evenly along the base and sides. Add pressure with your fingers to make it compact and bake for 5 minutes. Transfer the crust to a rack and allow it to cool completely.

To make the mousse, combine the chocolate, vanilla, and salt in a food processor. Add a cup of cream to a heavy saucepan and bring it to a boil.
