Chicken, tomato sauce, and cheese are the main ingredients used in chicken Parmesan. A part of the Italian cuisine, chicken Parmesan is served as a side dish in some places, whereas at others, it is served atop pasta. The following are some variations of chicken Parmesan.
Herb Chicken Parmesan
  • 1 lightly beaten large egg white
  • 1 lb chicken breast tenders
  • 1½ cups bottled fat-free tomato-basil pasta sauce
  • ⅓ cup (1½ oz.) grated fresh Parmesan cheese, divided
  • ⅓ cup (1½ oz.) shredded provolone cheese
  • ¼ cup dry breadcrumbs
  • 1 tbsp. minced fresh parsley
  • 1 tbsp. butter
  • 2 tsp. balsamic vinegar
  • ½ tsp. dried basil
  • ¼ tsp. salt, divided
  • ¼ tsp. black pepper
Take a shallow dish or bowl and add breadcrumbs, basil, Parmesan cheese, parsley, and ⅛ teaspoon of salt. In another bowl add egg white. Now dip each chicken piece in egg mixture and then in the breadcrumb mixture; set aside. Heat a nonstick skillet and melt butter in it over medium-high heat. Cook chicken in the melted butter for about 3 minutes on each side.
Keep the chicken warm. Meanwhile, take a microwave-safe bowl and add pasta sauce, ⅛ tsp. salt, pepper, and vinegar in it. Cover the bowl, microwave for about 2 minutes on high. Pour this sauce over the warm chicken and then coat evenly with provolone cheese and remaining Parmesan cheese. Cook the chicken again for 2 minutes in a pan with a handle. Cover the handle with foil to avoid burning. Viola!
Chicken Parmesan with Almonds
  • 1 egg, beaten
  • ¼ chopped red onion
  • 3 lb chicken breast halves, boneless, and skinless
  • 1 cup sliced almonds
  • 1 cup white wine
  • ½ cup grated Parmesan cheese
  • ¼ cup teriyaki sauce
  • 1 tbsp. minced garlic
  • 1 tbsp. olive oil
  • 2 tsp. minced fresh tarragon
Preheat the oven to 375°. Cut the chicken breast halves into two. Take two shallow bowls, add beaten egg to one bowl and almonds to another. Dip each piece of chicken in beaten eggs first and then in almonds. When done, add it to a baking dish and bake for about 20 minutes. After 20 minutes, sprinkle chicken with Parmesan cheese and bake for another 20-30 minutes.
Meanwhile, take a medium-sized bowl and heat oil in it. Next add garlic and onions to it and sauté for about 5 minutes. Add minced tarragon and teriyaki sauce and boil for about 10 minutes until the mixture is reduced by half. Serve sauce in a serving plate and then put a piece of chicken on top of it with snap peas.
Chicken Parmesan with Crackers
  • 10 crushed crackers
  • 6 small boneless, skinless chicken breast halves, pounded to ¼" thickness
  • 1 egg
  • 1 (10-oz.) package frozen chopped spinach, thawed, well drained
  • 4 oz. softened cream cheese
  • 1½ cups warm spaghetti sauce
  • 1¼ cups mozzarella cheese, divided
  • 6 tbsp. grated Parmesan cheese, divided
Preheat the oven to 375°F. Take a bowl and add 1 cup mozzarella cheese, cream cheese, 3 tablespoons of Parmesan cheese, and spinach. Blend well and then spread on the chicken. Roll up chicken tightly by starting at the narrow end; to secure it, use wooden toothpicks and set aside. Take a shallow dish, beat an egg in it and add the crackers and the remaining Parmesan cheese. Dip the chicken pieces in egg and then in the crumb mixture. Place these pieces in a 31×9" baking dish sprayed with cooking spray. Let the seam-sides be down. Bake for about 30 minutes, discard the toothpicks, and serve with spaghetti sauce and mozzarella.
