Eye of Round Steak with Horseradish Sauce
Ingredients
- 2 pounds eye of round steak
- 6 small onions, peeled and halved
- ¼ cup grated horseradish
- 2 tablespoons vegetable oil
- 1 tablespoon freshly squeezed lemon juice
- 1 cup sour cream
- 2 tablespoons freshly ground pepper
- Sea salt, to taste
Method
To cook this eye of round steak, first tie the steak with kitchen twine. Preheat the oven to 375° C. Place the beef steak on your cutting board and season generously with sea salt and pepper. Make sure that you season the steak on all sides thoroughly. Add a tablespoon of oil in a skillet and sear the beef gently on all sides.

- 2 tablespoons finely chopped thyme
- 2 tablespoons black peppercorns, crushed
- 3 tablespoons olive oil
- ½ cup beef stock
- 2 ½ tablespoons butter
- 2 tablespoons vegetable oil

In a zip lock bag, add vodka, crushed garlic, chopped parsley and thyme along with sea salt, olive oil and crushed peppercorn. Place the eye of round steak inside the zip lock bag and shake the bag well so that meat is evenly coated with the marinade. Place the bag inside the freezer to marinate overnight. This allows the marinade to tenderize the meat and the flavor of the meat also intensifies.
Preheat oven to 375° C. Remove the marinated steak from the bag and place it on a roasting tray. Reserve the marinade for the sauce. Roast meat for 30-35 minutes until the steak is cooked through but still tender inside. Remove steak from oven, wrap it in aluminum foil and allow it to rest for 10-12 minutes.
