  • ¾ cup packed brown sugar
  • 1 can of evaporated milk
  • 2 cups of mashed, cooked pumpkin
  • ½ tsp ground cinnamon
  • 2⅔ cups all-purpose flour
  • ½ cup cold water
  • ½ tsp. ground nutmeg
Preheat the oven at 200ºC. Cut the pumpkin into two, remove the seeds, as well as the stringy portion. Now, cut the pumpkin in chunks. Boil the pumpkin in 1 inch water over medium heat. After a while, reduce the heat and cover the pumpkin. Cook it like this for 30 minutes. After it is cooled, peel the pumpkin and mash it using a potato masher. In a bowl, mix flour and salt for making pie crust. Add shortening to the flour, along with water, 1 tbsp at a time.
Mix the dough until it holds itself together. Shape the dough into a ball. Roll out the dough to ⅛ inch thickness, using a floured board for it. Now cut the dough 1½ inch larger than the upside down pie pan. Roll the dough gently around the rolling-pin and put it on the pie pan, right side up. Unroll, and ease the dough into bottom of the pie pan. In a large mixing bowl use a mixer to blend brown sugar, ginger, nutmeg, cinnamon, pumpkin, evaporated milk, and salt.
