Freshly made pancakes with the perfect golden brown base and the deliciously fluffy top make the most appetizing breakfast food. However, most of us take time to get that perfect pancake mix.
What is a Pancake Mix?
A pancake mix contains all the dry ingredients required to make a perfect pancake. It can be made beforehand and used as and when you want it. Just keep it ready and make the batter by adding water. For all those busy working moms, pancake mix recipes are bound to banish the breakfast blues. You can make two or three varieties of these pancake mixes for the week so that you and your family don't get bored with having the same kind of pancakes everyday. Here are some ideas and tips that will ensure that your breakfast is truly the best meal of the day. It is advisable that you store your cake mix in airtight containers or resealable plastic bags. Moreover do not store the mix for too long.
Coffee Almond Pancake Mix
  • All-purpose flour - 2 cups
  • Wheat flour - 1 cup
  • Finely ground almonds - 1 cup
  • Coffee powder - ½ tsp
  • Baking powder - 2 tbsp
  • Milk powder - 3 Cups
  • Egg - 1
  • Sugar - ½ cup
  • Salt - 1 tbsp
  • Vegetable oil - 2 tablespoons
  • All you need to do is add 1¼ cups water, 1 egg, and 2 tablespoons vegetable oil to the pre-made pancake mix.
  • Preheat your nonstick pan or the cast iron skillet to 375 °F. If you want an easier way to get the temperature right, sprinkle drops of water on it and if it skitters across the pan, you know it is the right time to start making your pancakes
  • Coat the hot pan with the oil or butter according to your taste. In case you are hesitant to use too much of oil, better use an oil spray.
  • In order to test whether you've got the temperature right, make a mini-pancake and see that it does not burn and depending upon the result, adjust the temperature.
  • Once you have got the temperature right, ladle in the pancake batter according to the space available on the pan. Make sure you leave enough room between two pancakes so that it enables comfortable flipping.

To add variety to your pancakes, you can switch a few ingredients to change its flavor. For instance instead of almonds you can use cashew nuts, pistachios, walnuts, or even hazelnuts. Moreover if you want a substitute for coffee, you can use cocoa powder to have delicious chocolate pancakes as well.

These yummy pancakes can now be loaded with delicious toppings ranging from maple syrup to different kinds of jellies. If you are one of those people who likes fresh toppings on your hot pancakes, you can simple have finely chopped fruit to go with you pancakes. Blueberries, strawberries, apples, or mangoes - take your pick and load up your pancake.
