Meatballs and Sauce
Ingredients
  • Beef, ground, 1 lb.
  • Pork, ground, 1 lb.
  • Veal, ground, 1 lb.
  • Mushrooms, sliced, 1 pack
  • Water, 12 cups
  • Tomato paste, 6 cups
  • Bread crumbs, dried, 1¼ cups
  • Romano cheese, grated, 1 cup
  • Parsley, dried, 2 tablespoons
  • Basil leaves, dried, 1 tablespoon
  • Pork chops, 5
  • Garlic cloves, chopped, 4
  • Eggs, 2
  • Bay leaves, 2
  • Onion, chopped, 1
  • Olive oil
  • Salt and black pepper, for taste
Procedure
Take a big pot to mix tomato paste, 2 cloves of garlic, bay leaves, water, basil, and salt in it. Boil the mixture for few minutes and then keep it on low to simmer. Take a skillet and brown the 5 pork chops in some olive oil. Once the pork chops are cooked evenly, place them in with the mixture in the pot. The same skillet will be used to sauté the onions and mushrooms. Don't clean or wipe the leftover pork fats from the skillet. This will give flavor to the onions and mushrooms. As the mushrooms start to shed some water and onions turn translucent, add them to the pot as well. Now simmer the sauce for at least 7―8 hours. Keep stirring the sauce from time to time.
Before we start preparing the meatballs, preheat the oven at 350ºF. Take a baking pan and grease it with butter. In a mixing bowl, combine beef, pork, veal, beaten egg, Romano cheese, salt, pepper, soy sauce, bread crumbs, garlic, and parsley. Mix everything completely and make small, round balls. Keep the meatballs on the greased baking pan and then in the oven for about 20―25 minutes. Once the meatballs are cooked and the sauce is ready, add the meatballs into the sauce and let it sit for about 2 hours. Cook spaghetti few minutes before dinner, and add the meatballs and sauce in at the dinner table.
