Homemade chicken soup has been touted for its cold-healing and nasal congestion-relieving properties. Various scientific studies have proven that chicken soup has an anti-inflammatory effect on the body, which is why it helps alleviate a cold. Moreover, chicken soup is nutritious and gets easily digested. However, with today's hectic lifestyle, nobody bothers to prepare chicken soup at home anymore. We resort to instant soup packets, which are high in preservatives and artificial flavors. Preparing chicken soup at home is extremely easy, and once you add noodles to it, it becomes a fulfilling meal. Let's find out how it's prepared.
Soup Prepared with Chicken Broth
  • 8 cups chicken broth, divided
  • 2 stalks celery, thinly sliced
  • 1 leek, white and light green parts thinly sliced
  • 1 carrot, diced
  • 2 cups shredded chicken
  • 8 oz. egg noodles
  • Salt to taste
Method of Preparation
In a large soup pot, warm ¼ cup chicken broth over medium-high heat. Add celery, leeks, and carrots to the broth. Cook the vegetables for about 5 minutes, until they have softened. Stir occasionally. Add the remaining broth to the pot. Bring the broth to a boil and then allow it to simmer for around 10 minutes. Meanwhile, in another pot, prepare the noodles in salted water. Once the noodles have been cooked, drain and rinse them with cool water. Set the noodles aside. Next, add the shredded chicken to the boiling soup and cook for 2 minutes. Add cooked noodles to the chicken soup and cook for a minute. Add salt to taste. Serve your chicken noodle soup piping hot.
Soup Prepared from Scratch
  • 2 eggs, beaten
  • 3 tbsp. milk
  • 1 cup flour
  • 2 tsp. baking powder
  • 5-6 small chicken pieces
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 carrot, chopped
  • Dash of salt and pepper
Method of Preparation
Combine the eggs, milk, flour, and baking powder in a mixing bowl. Knead the mixture to form a soft dough. Roll it out using a rolling pin and slice thin strips to form the noodles. Allow the noodle strips to dry on a towel for about an hour. Once they've dried, drop them into a pot of boiling water, and allow them to cook. Drain, rinse, and set the noodles aside.
Now it's time to prepare the chicken soup. In a pot of water, add the chicken pieces, onion, tomato, and carrot pieces. Add a dash of salt and pepper. Allow the mixture to boil thoroughly, and after about 20 to 25 minutes, check if the chicken pieces have cooked. If cooked, remove the soup from heat. Strain the mixture for clear soup. Shred the chicken pieces and drop them into the pot. Add the noodles and boil again for 2 to 3 minutes. Your homemade soup is ready!
Easy Chicken Noodle Soup
  • 1 tablespoon butter
  • ½ cup chopped onion
  • ½ cup chopped celery
  • 4 cans chicken broth
  • 1 can vegetable broth
  • ½ pound chopped, cooked chicken breasts
  • 1½ cup egg noodles
  • 1 cup sliced carrots
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
Method of Preparation
Melt butter in a large pot over medium heat. Cook onion and celery in the butter for 5 minutes, until just tender. Next, pour in the chicken and vegetable broth into the pot, and add the chicken pieces, noodles, carrots, basil, oregano, salt, and pepper. Bring to a boil and then reduce the heat. Simmer for 20 minutes. Serve your soup hot.
Soup Prepared in a Crock-Pot
  • 3 carrots, peeled and cut into chunks
  • 3 stalks celery, cut into chunks
  • 1 large onion, quartered
  • 3 chicken breasts, halved
  • 2 cans chicken broth
  • 2 to 3 cups of water
  • Dried dill and parsley for garnishing
  • 8 oz. noodles
Method of Preparation
Add all the vegetables in a 5 quart Crock-Pot, along with the chicken. Add broth, water, dill, and parsley to the same pot. Cover and cook on low for 8 hours. After 8 hours, remove the veggies and chicken from the pot. Add the noodles and turn to high heat. In the meantime, shred the chicken and mince the vegetables. Return the chicken and vegetables to the Crock-Pot and heat it thoroughly. The noodles will take about 20 minutes to cook. Serve hot!
