Chicken Breast Scampi with Butter Sauce
  • Chicken breast, butterflied, boneless and skinless, 2
  • Canola oil, 2 tablespoons
  • Cilantro, chopped, 2 tablespoons
  • Salt, white pepper, and black pepper, for taste
  • Parsley leaves, chopped, for garnish
For Scampi Butter Base
  • Unsalted butter, softened, ¼ lb.
  • Red onion, minced, 2 tablespoons
  • Garlic, minced, 1 tablespoon
  • White wine, 1 tablespoon
  • Garlic powder, ½ teaspoon
  • Worcestershire sauce, ½ teaspoon
  • Lemon, juiced, 1
First we will make the scampi base. In a bowl, you will add all the ingredients for the scampi base mentioned above and mix everything properly. Here, you will also add the 2 tablespoons of chopped cilantro. Preheat the grill on high. Use canola oil to coat the chicken, and sprinkle salt and black pepper on top. Place the chicken breasts on the grill and cook for 5 minutes on all sides. If you don't know how long to grill chicken breast for, wait until the meat turns completely white. Once that happens, take it off the grill and add the scampi cilantro butter base on top. Sprinkle chopped parsley on top, and serve immediately.
Sweet and Lemony Chicken Wings
  • 3½ lbs. Wings, separated at the joints, rinsed
  • Lemongrass, chopped, ½ cup
  • Shallots, chopped, ¼ cup
  • Dry-roasted peanuts, chopped, ¼ cup
  • Cilantro, chopped, ¼ cup
  • Fish sauce, ⅓ cup
  • Green onion, chopped, 3 tablespoons
  • Brown sugar, 3 tablespoons
  • Lime juice, 3 tablespoons
  • Peanut oil, 3 tablespoons
  • Garlic cloves, chopped, 2 tablespoons
  • Ginger, chopped, ¼ teaspoon
  • Salt and black pepper, for taste
Take a food processor to mix garlic, ginger, green onions, lemongrass, shallots, brown sugar, lime juice, peanut oil, and fish sauce together. Blend till you get a smooth marinade mixture. Pour it directly on the wings and transfer into a Ziploc bag. Let the wings marinate in the refrigerator overnight.
When you're ready to cook, preheat the grill on high heat and take the wings out of the Ziploc bag. Place the wings directly on the grill and let it cook thoroughly. Sprinkle salt and black pepper on top. In between, use the marinade from the bag and baste the wings. If you don't know how long does it take to grill chicken wings, then cook for about 18 minutes first as you baste and then perhaps 10 minutes more after that. To serve, place the wings on bottom, and then sprinkle chopped peanuts and cilantro from top. You can serve the wings with a Greek yogurt dip or goat cheese dip.

  • Cilantro, for garnish, 1 tablespoon
  • Garlic powder, 1 tablespoon

  • Chicken legs w/thighs, 8 pieces
  • Salt and black pepper, for taste
In a Ziploc bag, combine rosemary, garlic powder, paprika, lemon juice, 1 tablespoon olive oil, salt, and black pepper together. Add chicken inside, close it tightly, and mix properly. Place the bag in the refrigerator overnight. The next day, preheat the grill on high and remove chicken from the bag.
