Grilled Bacon Wrapped Scallops in Lemon Juice
  • Sea scallops, 2 pounds
  • Bacon, 10 slices
  • Juice of one lemon, freshly squeezed
  • Olive oil, ½ cup
  • Pepper, 1 teaspoon
  • Salt to taste
Cooking Instructions
For making this easy bacon wrapped scallops, first marinate the shellfish. For preparing the marinade, take a medium-sized bowl and combine lemon juice, olive oil, pepper and salt to taste. Place the scallops in this mixture and allow them to marinate for about one hour. Meanwhile you can make the bacon ready for the scallops. Cut the bacon slices thinly so that each slice yields three pieces. Blanch the pieces in boiling water, for about four to five minutes to cook them partially.
Drain the water and transfer the par cooked bacon slices to a plate. Wrap bacon pieces around the scallops and pierce them with wooden skewers, soaked in water earlier. Place the skewers on a grill and cook the scallops on a medium heat, by turning them occasionally. Bast the marinade over the cooking scallops and once they turn golden brown in color, remove them from the skewers and serve hot.
Grilled Bacon Wrapped Scallops with Vegetables
  • Medium-sized sea scallops, 1 pound
  • Bacon, 6 slices
  • Green bell pepper, diced, 1
  • Large onion, cubed, 1
  • Cherry tomatoes, 12
  • Pineapple, peeled, cored and chunked, 1
  • Fresh lemon juice, ¼ cup
  • Melted butter, 4 tablespoons
  • Worcestershire sauce, 1½ teaspoons
  • Freshly ground black pepper, 1 teaspoon
  • Salt to taste
Cooking Instructions
Cut the bacon slices as desired and cook them partially in boiling water. Wrap the slices around the scallops and set them aside. Take a wooden skewer and pierce a piece each of onion, green bell pepper, scallops wrapped in bacon, pineapple and tomato. You can also use canned pineapple chunks, if you are unable to get fresh fruit. Follow the same procedure till all the skewers are done. Take a medium-sized bowl and blend the melted butter, Worcestershire sauce, lemon juice, pepper and salt to taste. Drizzle this mixture on top of each of the kebabs and cook them on the preheated grill for about 5 to 10 minutes, occasionally turning and basting them.
Bacon Wrapped Scallop Tournedos
  • Extra large sea scallops, 2 pounds (approximately 24)
  • Thick cut bacon, 12 slices
  • Fresh corn kernels, 2 cups
  • Large tomato, cored and cubed, 1
  • Sweet onion, diced, 1
  • Frozen lima beans, peeled and blanched, 2 cups
  • Fresh sage leaves, minced, ¼ cup
  • Unsalted butter, 5 tablespoons
  • Freshly ground black pepper, 1½ teaspoons
  • Salt to taste
Cooking Instructions
Take a large skillet and cook the bacon slices till it begins to leave the fat and is half done. Wrap this cooked bacon onto the scallops and thread them to the skewers. Sprinkle required amount of salt and pepper on the wrapped scallops and cook them on a preheated grill for about 5 minutes. Take a separate skillet and melt the butter in it. Add the onion to the butter and cook till it becomes translucent. Now stir in the tomato, lima beans (using fresh lima beans can enhance the flavor of the recipe), sage, corn, pepper and salt to taste. Cook the vegetables, for about 10 minutes, till they turn tender. To serve this delicious recipe, transfer the scallops to a large platter and place the cooked succotash on top, garnishing with freshly chopped cilantro.
