Raisin n' Nut Granola
3 cups rolled oats
1 cup raisins
1 cup cashew nuts
1 cup almonds, slivered
3/4 cup sweet coconut, shredded
1/4 cup and 2 tbsp maple syrup
1/4 cup and 2 tbsp dark brown sugar
1/4 cup vegetable oil
3/4 teaspoon salt
Begin by preheating the oven to 250 degrees F. Then combine the nuts, oats, sugar, and coconut in a mixing bowl. Next, combine the oil, salt, and maple syrup in another bowl and pour this into the oats and nuts mixture, mixing all of it well. Now pour this mixture into two sheet pans, and bake for 1 hr and 15 min, stirring every now and then so that it gets an even color. Then, remove it from the oven and put it in a large sized bowl, add the raisins and mix well.
Nutty Low-Carb Granola
1 cup unsweetened coconut, shredded
1 cup sunflower seeds
1 cup flax seeds
1 cup walnuts, chopped
1 cup pecans, chopped
1 cup almonds, chopped
2 tsp vanilla powder, without sugar and alcohol
1 stick butter, melted
2 tsp cinnamon
3 packets Splenda (or any other sugar substitute)
Mix the nuts, coconut, sunflower seeds, and flax seeds in a large sized roasting pan. Then, drizzle the melted butter on it and add the sugar substitute, vanilla powder, and cinnamon. Then, put this into an oven heated to 325 degrees F, for about 30 minutes, stirring every now and then.
Crunchy Granola
4 cups oats
1 cup buckwheat groats
1 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup sesame seeds
1/4 cup assorted nuts, chopped
2 tbsp wheat germ
1/2 cup of assorted dried fruit, cut into small pieces
1/2 cup honey
1/2 tsp cinnamon
1/2 cup oil
1/8 tsp salt
Begin by preheating the oven to 300 degrees F. Then, combine the seeds and grains in a shallow, large-sized baking pan. Next, put the oil and sweetener in another pan, and heat it until it becomes smooth, and pour this into the seed mixture, stirring it all well. Then, add the spices, and bake for about half an hour, stirring every now and then. Take it out of the oven and allow to cool, and then add the dried fruits, combining well.
Granola Chunks
1 cup rice puff cereal
1 cup granola
1/4 cup assorted dried fruit
1 cup marshmallows, miniature
2 tbsp peanut butter
2 tbsp honey
Use waxed paper to line a baking sheet. Then, in a bowl, combine the dried fruit, puffed rice cereal, and granola. Next, heat the rest of the ingredients in a pan on low heat, stirring continuously, and pour this on the cereal and granola mixture, stirring well. Then, using moist hands shape this into fist sized, uneven chunks, and place these on to the waxed paper. Put this into the refrigerator for about half an hour until the granola chunks set.
As you can see, granola recipes are not only easy to make, but can also be quite versatile. So, go ahead, use your imagination and surprise your family with a tasty breakfast or snack.
