Nowadays, garlic scape has replaced asparagus as the must-have culinary additive to grow in the backyard. It is also widely sold in the farmer's markets and fresh markets. It can be combined with many preparations, like pesto, tortillas, and pastas. The pickled ones are the most popular due to their scrumptious taste. Given below are some recipes that you can make at home, using this ingredient.
Garlic Scape and Almond Pesto
  • 10 garlic scapes (finely chopped)
  • ½ cup Parmesan cheese (finely grated)
  • ½ cup olive oil
  • ⅓ cup toasted almonds
  • Kosher salt or sea salt, to taste
Mix the finely chopped garlic scape, Parmesan cheese, almonds, and half of the olive oil in a food processor. Decide the texture that you would like the pesto to have, and blend the mixture accordingly. Add more olive oil and Parmesan if required. Season it with salt, to taste. You can also add some fresh lemon juice to it, just before serving. You can preserve this dish in the refrigerator for a couple of days, by storing it in an airtight container.
Lemon Scented Pasta with Garlic Scape and Vegetables
  • 5-6 garlic scapes (thinly sliced)
  • 5-6 sun-dried tomatoes (halved and thinly sliced)
  • ⅓ packet of spaghetti
  • ¾ cup fresh corn
  • 1 cup chicken stock
  • Zest and juice of 1 lemon
  • ½ cup flat-leaved parsley
Cook the spaghetti until it is just done, and set it aside. Sauté the garlic scape, sun-dried tomatoes, corn, parsley, lemon zest, and lemon juice in a deep pan, together. Simmer the mixture for a few seconds, and then turn up the heat. Add the chicken stock and previously cooked spaghetti to this mixture. Toss it well, until it mixes and gels thoroughly, and until the sauce becomes thick enough. Garnish it with some chopped parsley, and serve.
Garlic Scape, Mushrooms, and Asparagus Pizza
  • Pizza dough
  • Olive oil
  • Asparagus, mushrooms, and garlic scape (all sliced)
  • Fresh herbs like basil, rosemary, and sage.
  • Goat mozzarella cheese and regular mozzarella cheese (both shredded)
  • Red pepper flakes
  • Black truffle oil (optional)
Drizzle a generous amount of olive oil on top of the spread-out pizza dough, and then sprinkle your favorite herbs on it. After that, sprinkle a combination of both the cheese, and scatter the sliced asparagus, mushrooms, and garlic scape on top of it. Sprinkle the red chili pepper as per your spice tolerance. Top it with a generous amount of cheese, and a bit of black truffle oil if you wish. Bake this pizza in a preheated oven at 450 °C, for about 10 minutes.
Pickled Garlic Scape
  • 1 lb whole-garlic scape
  • Chili flakes
  • Fresh basil leaves
  • 5 cups water
  • 3 cups vinegar
  • ¼ cup salt
In a skillet, boil the water, salt, and vinegar together. Prepare a brine of the whole-garlic scape, fresh basil leaves, and chili flakes as per your spice tolerance. Fill it into a heated jar which has a lid. Preserve this mixture for at least 2 weeks to get the best possible flavor. It gets preserved best when the garlic scape is fresh.
