Fried Vanilla Ice Cream

Ingredients
  • Vanilla Ice Cream, 4 large scoops
  • Crushed Frosted Cornflakes, 1 cup
  • Cookie Crumbs, 1 cup
  • Eggs, 2
  • Sugar, 2 tablespoons
  • Vegetable Oil, for frying
  • Hot Chocolate Sauce
  • Whipped Cream
Method
  • With an ice cream scoop, make 4 balls of ice cream. Wrap each in individual wax paper and cover with plastic wrap. Place it in the freezer for about 2 to 3 hours.
  • In a bowl, combine cornflakes and cookie crumbs, and spread the mixture in a shallow dish.
  • Dip the ice cream balls in the cornflakes mixture and freeze for 30 minutes.
  • In a bowl, beat eggs and sugar so that the sugar can dissolve properly.
  • Dip the balls in the eggs mixture and then roll it on the crumb mixture to coat thoroughly.
  • You will have to freeze the balls again for an hour before frying.
  • Heat oil to 400 degrees Fahrenheit and add the balls into the oil. Fry till the balls are golden brown in color.
  • Remove the balls and place it inside a dessert bowl, drizzle with chocolate sauce, and serve with whipped cream on the side.
Fried Mexican Ice Cream

Ingredients
  • Vegetable Oil, ½ cup
  • Flour Tortillas (6 inch in size), 2
  • Ground Cinnamon, ½ teaspoon
  • Sugar, 2 tablespoons
  • Cornflakes Crumbs, ¼ cup
  • Vanilla Ice Cream, 2 large scoops
  • Whipped Cream
  • Maraschino Cherries
Method
  • Fry tortilla one at a time in hot oil over medium heat. The tortillas need to turn golden brown and crispy.
  • In a bowl, combine cinnamon and sugar, and sprinkle half of it inside the crispy tortillas.
  • In a different bowl, combine the remaining cinnamon-sugar mixture with cornflakes crumbs.
  • Scoop 2 large ice cream balls and roll it in the cornflakes crumbs till it is evenly coated.
  • Fry the balls in hot oil for 10 to 20 seconds or till the outer surface turns golden brown.
  • Place the balls in the middle of the tortilla.
  • Spray whipped cream on the ice cream. Garnish with cherries and serve.
If you do not have cornflakes for the recipe, you can use bread crumbs as well.
