Almond Crusted Chicken Fingers
Ingredients
  • Sliced almonds, ½ cup
  • Whole wheat flour, ¼ cup
  • Paprika, 1½ tsp.
  • Dried mustard and garlic powder, ½ tsp.
  • Salt, ¼ tsp.
  • Freshly ground pepper, ⅛ tsp.
  • Egg whites, ⅛ tsp.
  • Chicken tenders, 1 lb.
  • Extra virgin olive oil, 1½ tsp.
Method
Preheat the oven to 475°F and coat the baking dish with some cooking spray. Now in a food processor, add almonds, flour, paprika, garlic powder, mustard, salt, and pepper and grind until a finely powdered mixture is obtained. Put the mixture in the baking dish. Meanwhile, take egg whites and dip the chicken pieces in them and later transfer these to the baking dish to coat with the mixture. Now, bake the chicken fingers on the baking dish until they are crispy and golden brown for about 25 minutes.

Sweet and Sour Chicken with Brown Rice
Ingredients
  • Brown rice, 2 cups
  • Rice vinegar, ¼ cup
  • Soy sauce, 2 tbsp.
  • Cornstarch, 2 tbsp.
  • Apricot preserves, 2 tbsp.
  • Canola oil, 2 tbsp.
  • Chicken tenders, 1 lb.
  • Minced garlic, 4 cloves
  • Finely grated ginger, 2 tsp.
  • Chicken broth, 1 cup
  • Vegetable pieces of broccoli, 6 cups
  • Bell peppers and snow peas, 1 cup
  • Sliced water chestnuts
Method
Mix vinegar, soy sauce, cornstarch, and apricot preserves in a bowl. Meanwhile, in a cooking pan, cook chicken in oil until it turns dark brown. Add the remaining one tablespoon oil along with garlic, ginger, and the chicken broth and bring the mixture to boil while stirring constantly. Add the rest of the vegetables and cook them as well. Now add the sauce mixture prepared previously and simmer until the sauce has thickened and till chicken is cooked properly. Once cooked, serve the sauce with steamed brown rice.

Chicken and Spaghetti Parmesan
Ingredients
  • Cooked spaghetti or pasta, 1 bowl
  • Pasta sauce, 1 cup
  • Cooked chicken breasts, 1 cup
  • Grated Mozzarella cheese
  • Parmesan cheese
Method
Spread pasta sauce over cooked pasta and mix thoroughly. Spread this mixture onto a baking dish. Sprinkle cheese over the mixture and top it with the chicken pieces. Pour some more sauce and the grated cheese and bake the mixture for 20-30 minutes at 350°F. Serve each chicken piece with some spaghetti.

Green Pizza
Ingredients
  • Pizza dough; prepared, 1 lb.
  • Broccoli, chopped, 2 cups
  • Arugula, chopped, 6 cups
  • Pinch of salt and ground pepper
  • Pesto, ½ cup
  • Water, ¼ cup
  • Shredded Mozzarella cheese, 1 cup
Method
Spread the dough on the baking sheet and bake for 8 to 10 minutes at 450°F. Meanwhile, cook the broccoli and arugula in a cooking pan until it becomes crisp. Take out the baked pizza base; top it with pesto, broccoli, and arugula mixture and sprinkle grated cheese. Again bake it for 10 minutes until the cheese melts.

Roasted Pecan Salmon
Ingredients
  • Salmon fillets
  • pinch of salt and pepper
  • Honey and mustard, 1 tbsp.
  • Bread crumbs
  • Chopped pecans, 2 tbsp.
  • Parsley, 1 tbsp.
  • Lemon wedges
Method
Wash the salmon fillets properly. Coat them with salt and pepper. Meanwhile, mix honey and mustard together and coat the fillets in this mixture. Next, roll them over breadcrumbs and bake them at 400°F for 10 to 15 minutes. Serve with parsley and lemon wedges.
