Owing to the increasing awareness about healthy food, people are looking for healthier options to their unhealthy habits. Cheeseburgers and French fries are being frowned upon and the whole grain bread or the wheat bread has replaced the white bread. One thing that I have learned is that avoiding junk food can be really easy if you have homemade options that are more tempting than the junk food available outside. Having made several attempts at avoiding junk food, I have finally found some great homemade recipes, which are low on calories and high on protein and are yet delicious and appetizing.
Egg salad is an integral part of the Anglo-American tradition of salads. It is a high-protein or high-carbohydrate salad usually made with hard-boiled eggs, mayonnaise, mustard, minced celery, salt, pepper and other herbs. Here is an egg salad recipe which not only scores high on the nutrition scale but is really delicious too.
Egg Salad Sandwich Recipe
This egg salad varies slightly from the conventional version of the egg salad sandwich. Instead of using wholesome quantities of mayonnaise, this recipe uses just a tablespoon of mayonnaise. In addition to the traditional ingredients of this sandwich, this recipe also has some fresh chopped tomatoes and onions that enhance the overall flavor of the sandwich filling. The onion tomatoes, chilly and lemon give a spicy salsa-touch to the regular egg salad sandwich.
Before you start making the sandwich, ensure that you wash the veggies thoroughly. Also chopping the veggies finely is important since the filling of the sandwich tastes better when the finely chopped ingredients blend well to form a beautiful blend of varied flavors.
- Hard-boiled eggs - 6
- Mayonnaise -1 tablespoons
- Fresh lemon juice - 1 teaspoon
- Chopped celery - 1 cup
- Chopped onions - ½ cup
- Chopped tomatoes - ½ cup
- Chopped green chilies - 2
- Whole grain bread - 8 slices
- Salt and pepper according to taste
Making this recipe is relatively simple, less time-consuming and is perfect for breakfast, lunch or even as a late afternoon snack. First of all you need to take the hard-boiled eggs, chop them and put them in a mixing bowl. Now add the mayonnaise, salt and pepper and mix well. Try and mash the mixture so that it becomes easy to use it as a spread on the bread. Having done this, it is time to add the chopped celery, onions, tomatoes, chilies and a dash of lemon juice. Mix the ingredients well. Now the sandwich filling is ready.
Now apply some butter on the whole grain bread. Make sure to apply butter on both the sides of the bread slices. Having done this, add the egg salad sandwich filling between two slices of bread and grill the sandwich in a sandwich maker. Applying butter on the outside makes the sandwich crispy golden brown on the outside.
This egg salad sandwich recipe is quite filling and can also be accompanied by some fresh salad and fruits to form a wholesome meal at any time of the day. So the next time you are looking for alternative options to make your egg sandwich, you can try this one out for variety.
