Pollo al Ajillo a.k.a. Garlic Lemon Chicken
In most countries, chicken is relatively affordable for most people. Since it is a white meat, it is much healthier than others and is very easy-to-make. This recipe contains two main ingredients that Spain is famous for all over the world, namely garlic, which is an anti-oxidant and lemon, which is rich in vitamin C. The lemon gives a tangy zest to the dish and saffron imparts a special yellow color as well as a beautiful aroma, making this dish absolutely savory.
  • Chicken, (chopped) 1
  • Garlic, (crushed) 1 tbsp.
  • Water, 1 cup
  • Lemon Juice, 1 lemon
  • Saffron, 3 strands
  • Olive Oil, 2 tbsp.
  • Seasoning
  • Heat the oil in a small pan.
  • Add the chopped chicken pieces and sauté until they turn golden brown.
  • Season the mixture and place in a large casserole bowl.
  • Sauté the crushed garlic.
  • In water, stir the saffron and zest of lemon.
  • Bring this mixture to a boil and let it simmer for about 3 minutes.
  • Remove the mixture from the heat and then pour in the lemon juice.
  • Pour the mixture over the chicken.
  • Bake the dish at about 340° F, until the chicken becomes tender.
Spanish Tapas a.k.a. Garlic Shrimp
Garlic shrimp is very popular and is known as gambas al ajillo. This recipe is ideal if you like cooking at home. Shrimp are readily available seafood items and they don't take a long time to cook.
Spanish Tapas a.k.a. Garlic Shrimp
  • Shelled Shrimp, 1 lb.
  • Garlic Cloves, (sliced) 6
  • Chili Pepper, (chopped) 1
  • Seasoning
  • Olive Oil, 2 tbsp.
  • Lemon, (quartered) 1
  • Parsley, (chopped) 1 tbsp.
  • Heat the olive oil in a pan and then add the garlic slices.
  • When the garlic starts to color slightly, add the chili pepper.
  • Cook this mixture for about 2 minutes and then increase the flame.
  • Add the shrimp in the mixture and sauté them for about 1 to 2 minutes on each side.
  • Season the mixture and then sprinkle it with the chopped parsley.
  • Serve the dish along with lemon wedges.
Arroz al Horno a.k.a. Baked Spanish Rice
  • Rice, 4 cups
  • Stock, 8 cups
  • Pork, (cut in chunks) 200 grm.
  • Pre-cooked Chickpeas, 1 cup
  • Potato, (thinly sliced) 1
  • Tomatoes, (skinned and chopped) 2
  • Chorizo Sausages, 2
  • Garlic Clove, 1
  • Saffron Strands, 3
  • Salt, as per taste
  • Olive Oil, 2 tbsp.
  • Heat the oil in a small pan and sauté the pork chunks.
  • Add the potato slices and heat until they turn brown.
  • Introduce the tomatoes and chickpeas.
  • Lower the heat and cook the mixture gently for about 5 minutes.
  • Add chorizo sausages and rice. Stir gently.
  • Pour in the crumbled saffron and the stock.
  • Bring the mixture to a boil.
  • Place the mixture in a casserole dish and put the garlic head on top.
  • Preheat the oven to about 375° F, and cook the dish in it for about 30 minutes.
  • Remove the garlic head before you serve.
