Procedure
  • Heat the oil in a small pan.
  • Add the chopped chicken pieces and sauté until they turn golden brown.

  • Rice, 4 cups
  • Stock, 8 cups
  • Pork, (cut in chunks) 200 grm.
  • Pre-cooked Chickpeas, 1 cup
  • Potato, (thinly sliced) 1
  • Tomatoes, (skinned and chopped) 2
  • Chorizo Sausages, 2
  • Garlic Clove, 1
  • Saffron Strands, 3
  • Salt, as per taste
  • Olive Oil, 2 tbsp.
Procedure
  • Heat the oil in a small pan and sauté the pork chunks.
  • Add the potato slices and heat until they turn brown.
  • Introduce the tomatoes and chickpeas.
  • Lower the heat and cook the mixture gently for about 5 minutes.
  • Add chorizo sausages and rice. Stir gently.
  • Pour in the crumbled saffron and the stock.
  • Bring the mixture to a boil.
  • Place the mixture in a casserole dish and put the garlic head on top.
  • Preheat the oven to about 375° F, and cook the dish in it for about 30 minutes.
