Fudge is an extremely rich and sweet confectionery that is made from sugar, milk, and butter. Cocoa or chocolate is often included in the list of ingredients of a fudge recipe. It is difficult to say exactly when was the first fudge made. However, one of the first documentations of this dessert can be traced back to a letter written by Emelyn Battersby Hartridge, then a student at Vassar College in Poughkeepsie, New York. She mentioned that fudge was made in 1886 by a schoolmate's cousin in Baltimore who sold it for 40 cents. History of fudge indicates that it has been around for a couple of centuries now and it is its taste that has made it one of the most popular confectioneries till date.

Recipe #1

Ingredients
  • Powdered Sugar, 1 lb
  • Milk, ¼ cup
  • Butter, ¼ cup
  • Vanilla extract, 1 tsp.
  • Cocoa, ½ cup
  • Nuts (chopped), ½ cup
Procedure
Lightly grease an 8-inch square dish. Alternately, you could also line it with wax paper. Keep it aside. Now, take a heat resistant bowl and mix the sugar and cocoa in it. To this mixture, add the milk and butter. Do not stir this mixture. Heat it in the microwave for 2 minutes on high. Now, add the vanilla extract and nuts to the mixture. Stir it till the ingredients blend properly. Pour the mixture into in a dish, and refrigerate it for about an hour. After the fudge sets, cut it, and serve.

Recipe #2

Ingredients
  • Miniature marshmallows, 1¼ cups
  • Half and half milk or evaporated milk, ½ cup
  • Butter (cut into small pieces), ½ cup
  • Sugar, 1 cup
  • Sweet baking chocolate bars (cut into small pieces), 8 oz.
  • Salt, a pinch
  • Nuts (chopped), 1 cup
Procedure
Add the miniature marshmallows, butter, sugar, salt, and half and half milk to a 3-quart casserole. Mix the ingredients well and microwave on high for 3-4 minutes. Ensure that the marshmallows puff by this treatment. Now, stir till the marshmallows melt and the ingredients mix well. Add the chocolate pieces, vanilla, and chopped nuts to this mixture. Stir again till the chocolate melts. Pour the mixture into a baking dish. Place it in the refrigerator for at least 3 hours. By this time, the mixture should set. Instead of the baking dish, you can also use a buttered loaf dish.

Ingredients
  • Chocolate chips, 12 oz.
  • Condensed milk, 1 can
  • Vanilla extract, 1 tsp.
  • Maraschino cherries
Procedure
Melt the chocolate chips in the microwave first. Add the condensed milk to it and mix well. Cook this mixture in the microwave for a minute. Now, add the vanilla extract and cherries to the mixture. Smear a dish with butter. Pour the mixture into this dish. Leave it overnight to set. You can also add chopped nuts to it if you want.

Ingredients
  • NESTLÉ Toll House semi sweet morsels, 12 oz.
  • Condensed milk, 14 oz.
  • Vanilla extract, 1 tsp.
  • Walnuts (chopped), 1½ cups
Procedure
Mix the condensed milk and semisweet morsels in a large microwave-safe bowl. Microwave the mixture for 3 minutes on high. Take the bowl out and stir the mixture till the morsels melt completely and a smooth mixture is formed. Add the nuts and vanilla extract to the mixture. Stir it further. Spread some butter on an 8-inch square pan. Pour the mixture into this pan, and refrigerate it for about 2 hours. Once the fudge sets, cut it, and serve.
