2 large potatoes
2 cups chicken broth
½ cup flour
½ cup butter
2 cups milk
Salt and pepper to taste

Scrub and bake potatoes at 350°F for about an hour. Mix the flour and butter to prepare a roux. Add milk and allow it to thicken. Following this, add chicken broth. Cube the potatoes and add them to this mixture. Add pepper and salt to taste and serve hot. If you wish, you can garnish the soup with different toppings like bacon, cheese, cilantro or chives.

6 potatoes, pared and cut in 1-inch chunks
1 carrot, scraped and sliced
2 leeks, washed, thinly sliced
4 cups chicken broth
2 onions, chopped
13 oz milk powder
1 stalk celery, sliced
1 tbsp parsley flakes
2 tbsp butter
Pepper to taste
1½ tsp salt
Chopped chives, for garnish

Mix and boil the potatoes, carrot, onions, parsley, celery, leeks, chicken broth, butter, pepper and salt. Allow this mixture to be cooked well. Add milk powder and stir. Garnish with chives before serving.

5 cups chopped peeled potatoes
1 cup shredded cheddar cheese
3 cups half-and-half
3 tbsp butter
1 chopped onion
2 tsp salt
3 tbsp chopped fresh flat-leaf parsley

Boil potatoes, onion and salt. On bringing it to boil, reduce the heat and allow it to simmer for about 12 minutes, until the potatoes and onions become tender.

Remove the potatoes and onions from the pan and mash them smooth. Then, heat the potato-onion puree in a skillet. Add butter and half-and-half to it. Maintain medium heat. Take care that it should not come to a boil. Following this, add cheese and stir until it melts. Garnish with parsley and serve hot.

8 cubed potatoes
6 cubes chicken bouillon
2 stalks celery (diced)
1 chopped onion
1 pound bacon (cooked and crumbled)
1 pound half and half
1 can condensed cream of mushroom soup
2 cups shredded cheddar cheese

Boil the potatoes, onion, celery and bouillon and simmer on medium heat until the potatoes are about 15 minutes away from being finished. Add half and half, bacon and mushroom soup. When the soup becomes creamy, add the shredded cheddar. Stir until the cheese melts and then simmer until the potatoes are done.

*Sauteing the onion and celery on butter can be a good idea as well.
