Chicken Casserole
Here is an economical and simple recipe that can be a hit among your kids. The best part is that, it can be made ahead of time and frozen. You just have to take it out of the refrigerator and bake, whenever required.

Ingredients:
  • Chicken Breast, (skinless and boneless) (halved) 4
  • Sour Cream, 1 cup
  • Condensed Cream of Chicken, 1 can
  • Mushroom, (chopped) ¼ cup
  • Round Crackers
Directions:
Boil the chicken for about 20 to 30 minutes. Once it is cooked, chop it into small pieces. Place the bite size pieces in a baking dish. Combine sour cream, chopped mushrooms, and the soup together and pour the mixture over the pieces on the baking dish. Top it with crumbled crackers, cover and bake it in a preheated oven at 350º F for about 30 minutes. The dish is ready to hit the table.

Bacon Chicken

Ingredients:
  • Chicken Breasts, (boneless) (halved) 6
  • Olive Oil, 1 tbsp.
  • Butter, 1 tbsp.
  • Onion, (chopped) 1
  • Salt, ½ tsp.
  • Pepper, ¼ tsp.
  • Garlic Cloves, (minced) 3
  • Cheddar Cheese, (shredded) 2 cups
  • Bacon, 6 slices
Directions:
In a skillet, cook bacon for about 5 minutes until crisp. Crumble it and keep it aside. Cook onion and garlic for about 3 minutes and add salt, pepper, and the cooked bacon. Now, sauté chicken breasts in a mixture of olive oil and butter, until it is almost cooked. Place it in a baking dish and spread the bacon mixture over it. Sprinkle with cheese and bake at 350° F for 10 minutes. Serve it hot.

Shrimp Stuffed Chicken Breasts

Ingredients:
  • Chicken Breasts, (skinless and boneless) 4
  • Tiny Shrimp, (thawed) 1 can
  • Cream of Celery Soup, 1 can
  • Butter, 1 tbsp.
  • Paprika, ½ tsp.
  • Onion, (finely chopped) ½ cup
Directions:
In a bowl, combine shrimp, onion, celery, and mix it well with the soup. Pound the breasts and place them on a tray with the inside part facing up. Spread the above shrimp mixture on it, roll it up and secure with toothpicks. Place the stuffed meat in a baking dish along with melted butter and bake at 350° F for about 30 minutes, until it becomes tender. Serve it hot with rice. You could also use crab meat, instead of shrimp.

Lemon Pepper Chicken

Ingredients:
  • Chicken Breasts, (boneless) (halved) 8
  • Lemon Pepper Seasoning, 1½ tsp.
  • Lemon Juice, 2 tsp.
  • Fresh Oregano, (chopped) ½ cup
  • Chicken Broth, 1 cup
  • Extra Virgin Olive Oil, 4 tbsp.
Directions:
Season the chicken with lemon pepper and oregano. Cook it in olive oil for about 3 minutes until brown. Add oregano and lemon juice to the broth and mix well. Pour this mixture on the meat and continue cooking for about 5 minutes. This dish tastes best when served with pasta.
