  • 3 mashed bananas
  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup melted butter
  • 1/3 cup packed brown sugar
  • 1 egg, lightly beaten
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
Preparation
  • In a large bowl, mix 1 and 1/2 cups flour, baking soda, baking powder and salt.
  • Take another bowl; beat the bananas, sugar, egg and melted butter together.
  • Combine both the banana and flour mixtures. Spoon the batter in slightly greased muffin cups.
  • Mix the brown sugar, 2 tablespoons flour,1 tablespoon butter and cinnamon in a bowl, until the mixture resembles coarse cornmeal.
  • Sprinkle the topping over the muffins. Bake these muffins in a preheated oven at 350ºF for 18 to 20 minutes.

Ingredients
  • 3 ripe bananas
  • 1 and 1/2 cups whole wheat flour
  • 1/2 cup chopped dates
  • 1 cup peeled, shredded apple (firmly packed)
  • 1/2 cup skim milk
  • 1/2 cup fructose
  • 1/2 cup bran
  • 1 tablespoon baking powder

Preparation
  • In a large bowl, add all the ingredients except egg whites and milk; mix them well.
  • In a small bowl, beat egg whites and slowly add milk to it.

  • In another bowl, beat eggs, sugar, vanilla, buttermilk, and oil.

Ingredients
  • 1 cup whole wheat flour
  • 1/2 cup Splenda (no-calorie sweetener)
  • 1 large banana
  • 1/2 cup Kashi Golean Crunch Cereal
  • 1 cup strawberries
  • 2 tablespoons applesauce
  • 1/2 teaspoon baking powder
  • 1/2 cup whole milk
  • 1 teaspoon ground cinnamon

Preparation
  • In a large bowl, mix flour, cereal, sweetener, baking soda, baking powder and salt.
  • In another bowl, combine rest of the ingredients and add the previously prepared mixture to it; stir well till it moistens.
  • In the greased muffin cups, pour the mixture and evenly distribute it.

Ingredients
  • 2 mashed bananas
  • 6 oz. (1 pkg.) Nestle's semi-sweet chocolate morsels
  • 1/2 cup butter
  • 1 cup sugar
  • 1 and 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup sour cream
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 eggs
Preparation
  • Cream the butter and sugar with a mixer.
  • Add eggs and mix well. Mix baking soda into the sour cream and let it rise for a minute.
  • Add eggs, butter, bananas to it and blend well.
