Banana muffins are delicious, either made in a simple way or with some added flavors like blueberries, chocolate chips, orange, peach, strawberry, etc. Muffins are baked in small portions and are of different shapes and sizes. They are not as sweet as cakes, but are liked by everyone especially, kids. Muffins can not only be served for breakfast, but also for tea or at other meals. Here, are some mouth-watering banana muffin recipes:
Banana Crumb Muffins
  • 3 mashed bananas
  • 1 and 1/2 cups all-purpose flour
  • 3/4 cup white sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup melted butter
  • 1/3 cup packed brown sugar
  • 1 egg, lightly beaten
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter
  • In a large bowl, mix 1 and 1/2 cups flour, baking soda, baking powder and salt.
  • Take another bowl; beat the bananas, sugar, egg and melted butter together.
  • Combine both the banana and flour mixtures. Spoon the batter in slightly greased muffin cups.
  • Mix the brown sugar, 2 tablespoons flour,1 tablespoon butter and cinnamon in a bowl, until the mixture resembles coarse cornmeal.
  • Sprinkle the topping over the muffins. Bake these muffins in a preheated oven at 350ºF for 18 to 20 minutes.
Banana Date Muffins
  • 3 ripe bananas
  • 1 and 1/2 cups whole wheat flour
  • 1/2 cup chopped dates
  • 1 cup peeled, shredded apple (firmly packed)
  • 1/2 cup skim milk
  • 1/2 cup fructose
  • 1/2 cup bran
  • 1 tablespoon baking powder
  • 2 egg whites
  • In a large bowl, add all the ingredients except egg whites and milk; mix them well.
  • In a small bowl, beat egg whites and slowly add milk to it.
  • Combine this mixture with the earlier prepared mixture.
  • Take a muffin tin, spray it with cooking spray and pour the mixture into the tin.
  • Bake it in a preheated oven at 350ºF for 20 to 25 minutes.
Banana-Pineapple Oatmeal Muffins
  • 1 cup diced bananas
  • 1 cup quick-cooking oats
  • 8 oz. (1 can) crushed pineapple, undrained
  • 1 and 1/4 cups flour
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 cup buttermilk
  • 2 eggs
  • 1/4 cup oil
  • Take a large bowl, mix oats, flour, baking powder, salt and cinnamon.
  • In another bowl, beat eggs, sugar, vanilla, buttermilk, and oil.
  • Pour this mixture over the dry ingredients and stir till it moistens.
  • Add pineapple and bananas to the mixture; mix well.
  • Grease the muffin cups or line it with muffin paper, and pour the mixture into it.
  • Bake the mixture in a preheated oven for 18 to 20 minutes at 400ºF.
Strawberry Banana Crunch Muffins
  • 1 cup whole wheat flour
  • 1/2 cup Splenda (no-calorie sweetener)
  • 1 large banana
  • 1/2 cup Kashi Golean Crunch Cereal
  • 1 cup strawberries
  • 2 tablespoons applesauce
  • 1/2 teaspoon baking powder
  • 1/2 cup whole milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 cup eggbeaters (real eggs with rich flavor and less cholesterol)
  • In a large bowl, mix flour, cereal, sweetener, baking soda, baking powder and salt.
  • In another bowl, combine rest of the ingredients and add the previously prepared mixture to it; stir well till it moistens.
  • In the greased muffin cups, pour the mixture and evenly distribute it.
  • Bake it in preheated oven at 350ºF for 15 to 20 minutes or until the tops turn golden.
Chocolate-chip Banana Muffins
  • 2 mashed bananas
  • 6 oz. (1 pkg.) Nestle's semi-sweet chocolate morsels
  • 1/2 cup butter
  • 1 cup sugar
  • 1 and 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup sour cream
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 2 eggs
  • Cream the butter and sugar with a mixer.
  • Add eggs and mix well. Mix baking soda into the sour cream and let it rise for a minute.
  • Add eggs, butter, bananas to it and blend well.
  • Mix flour and baking soda, and add to the mixture.
  • Put vanilla and chocolate chips into it and stir well.
  • Now, pour the mixture into greased muffin cups and bake it in a preheated oven at 350ºF for 25 to 30 minutes.
These banana muffins are toothsome and don't take much time for preparation. I am sure, once you try them, you'll be hooked forever!
