Deviled eggs is a simple egg dish which is prepared by cutting a hard-boiled egg into two, removing the yolk, mixing it with different ingredients, filling it back inside the egg white, and then seasoning it with paprika. This wonderful recipe has been given several other names including eggs mimosa, Russian eggs, dressed eggs, and picnic eggs. Originally from Italy, it is now made in almost every country! Each country has its own variation. 
While the process to make the eggs is the same, the ingredients may differ from region to region. This dish can be served as an appetizer, side dish, or even as a main course. The ingredients for deviled eggs also depend on the way it is going to be served. For example, the eggs may be stuffed with salmon, bacon, and ham if they are to be served as a main course dish. On the other hand, if they are to be served as an appetizer, only a few spices are added.
Classic Deviled Eggs
  • 1 dozen eggs
  • ¼ tsp Tabasco
  • ⅓ cup mayonnaise
  • 1 tbsp minced onion or shallot
  • 2 tsp Dijon mustard
  • Paprika, as per taste
  • Salt and pepper, as per taste
Take a large saucepan, place the eggs, and pour water until the eggs are covered with at least an 1 inch of water. Add 1 tbsp vinegar to the water along with a pinch of salt. Bring to a boil, cover and remove from heat. Let it cool for about 12-15 minutes. Discard the hot water, run cold water over the eggs, and let them sit in cold water for a couple of minutes.
Peel the eggs and then cut each of them into half. Scoop out the egg yolks and put the yolk in a mixing bowl. Place the egg whites on serving plates. Mash the egg yolks with the help of a fork, add mayonnaise, mustard, Tabasco, and onion. Mix well, season with salt and pepper. Spoon this mixture again into the egg whites. Season with paprika.
Russian Eggs
  • 12 hard-boiled eggs
  • ¼ cup reduced-fat sour cream
  • ½ tsp freshly grated lemon zest
  • ½ cup fresh bread crumbs
  • Salt & freshly ground pepper to taste
  • Caviar for garnish
Cut the hard-boiled eggs into halves. Scoop out the yolk and place them in a small bowl. Set aside the egg whites. Mash the egg yolks, add in sour cream, breadcrumbs, and lemon zest. Add salt and pepper as per taste, mix well. Spoon the mixture into egg whites and garnish with caviar. Serve immediately.
Southwestern Deviled Eggs
  • 6 large eggs, hard-boiled and peeled
  • 1 tbsp chopped green onion
  • 3 tbsp shredded Cheddar
  • ⅓ cup mayonnaise
  • 1 tsp ground cumin
  • 2 tbsp salsa
  • 1½ tbsp sour cream
  • Salt and freshly ground black pepper
Lengthwise, halve the eggs. Like the previous recipes, place the yolks in a small bowl. Mash the yolks, add cheddar, salsa, green onion, cumin and sour cream. Season with salt and pepper and mix well. Spoon the yolk mixture into the egg whites evenly. You can refrigerate these eggs until ready to serve.
This egg dish is so easy to prepare that you can modify it according to your wish and personalize it with your favorite ingredients. Just ensure that none of the ingredients you use overpower the taste of the eggs.
