A no-bake dessert is held together by things that are reversible. Butter is hard in the fridge and slack on the counter. Nearly every no-bake treat leans on one of four things, sometimes two working together. Knowing which one is carrying your dessert tells you what will break it.

### Butter

Butter is the workhorse of pressed crusts and crumb bars. It is roughly 80 percent fat, and that fat is solid in the fridge, pliable at room temperature, and fully liquid somewhere in the nineties.
