Cucumber sandwiches are for the snack world, what chicken soup is for the sick soul. It's a snack that is truly like no other. And if you've noticed, it is a classic choice for all occasions. Cucumber sandwiches seem to fit perfectly in all the situations that they are placed in―may it be as an accompaniment to a picnic out in the countryside, or as a late afternoon snack right after your baseball or swimming practice.
These sandwiches are very filling and can be had as a plain snack without any frills, or can be crafted into a delicious meal with those extra frills. In the following sections, we will give you some basic and easy sandwich recipes.
With Mint Leaves
  • Mint leaves, ¼ cup
  • Butter, 2 tbsp., unsalted
  • Bread slices, 6
  • Cucumber, 3 inches long
  • Cream cheese, 2 tbsp.
  1. Take the mint leaves and wash them under water, then strain the excess water off.
  2. Next, dice the leaves.
  3. Mix the mint, butter, and cheese into a paste by placing them all into a bowl.
  4. Spread the paste on a slice.
  5. Now, slice the cucumber into the desired thickness.
  6. Place the diced cucumber pieces onto the slice and cut into desired shape and size.
With Garlic
  • Cucumber, 1 large, sliced and peeled thinly
  • Butter, ¾ cup
  • Bread slices, 20
  • Garlic, 2 tbsp., fresh
  • Lemon juice, 1 tbsp.
  • Olive oil, 1 tbsp.
  • Pepper to taste
  • Salt
  1. Salt the cucumber slices and place them in a strainer for the excess water to drain off.
  2. Take the garlic through a blender so that it becomes a paste.
  3. Mix the butter and garlic and apply to one side of the slice.
  4. Put the olive oil, pepper, and lemon juice in a bowl and stir well.
  5. Next, add the salted cucumber slices to the mixture and coat well.
  6. Now, place the cucumber on top of the bread slices and cover with the other slices.
  7. Remove the crusts and quarter it if you wish.
  8. Serve immediately.
  9. This makes about 35-40 sandwiches.
With Dressing
  • Cucumber, 1 large, sliced and peeled thinly
  • Cocktail rye bread, 1 pack
  • Italian salad dressing mix, 7 ounces
  • Whipped cream cheese, 8 ounces
  1. Mix the cream cheese and salad dressing in a small bowl.
  2. Spread on either side of the rye bread slices.
  3. Now, place the cucumber pieces on top of this mixture.
With Eggs
  • Cucumber, 1 small, sliced and peeled thinly
  • Eggs, 3, hard cooked and chopped
  • Whole wheat bread slices, 8
  • Green pepper, ¼ cup, chopped
  • Mayonnaise, ¼ cup
  • Red onion, 2 tbsp., chopped
  • Lettuce leaves, 4
  • Lemon juice, ½ tsp.
  • Pepper, ⅛ tsp.
  • Salt, ⅛ tsp.
  1. Mix the green pepper, eggs, onion, lemon juice, mayonnaise, salt, and pepper in a bowl.
  2. Spread on the bread slices.
  3. Place the cucumber and lettuce on the slices and cover with the remaining slices.
With Parsley and Celery
  • Cucumber, 1 ½ cup, finely chopped
  • Cream cheese, 3 oz.
  • Bread slices, 32
  • Celery, ½ cup
  • Mayonnaise, ¼ cup
  • Onion, 1 tbsp., grated
  • Parsley, 1 tsp., chopped
  • Pepper, ⅛ tsp.
  • Salt, ¼ tsp.
  1. Peel the cucumber after it has been de-seeded.
  2. Next, chop into pulp and drain well.
  3. Mix the mayo, cheese, celery, onion, parsley, pepper, and salt in a bowl.
  4. Lightly butter the bread slices.
  5. Place 2 tbsp. cucumber pulp onto the slices and cover with the remaining slices.
  6. Cut into desired rectangular or triangular shape. You can cut the crust off if you prefer.
  7. This makes 64 sandwiches (in triangles)
