Besides lowering body temperature, food items like cucumbers act to rid the face off ugly eruptions, and also help straighten any digestion issues. Even the calories in cucumber aren't much. That makes cucumber salad dressings perfect options for the summers.

Basic Cucumber Salad Dressing
This is the simplest cucumber salad recipe you can ask for and make, when larder stocks are heavily depleted. All you have to lay your hands on for 2 servings are,
  • Cucumber, 1 cup (skinned)
  • Mayonnaise, ½ cup
  • Onion, 1 tbsp. (minced)
  • Milk, enough for thinning purposes
Procedure

Make a smooth mayonnaise and cucumber paste in the mixer, and then add the onion before mixing again. Finally, add milk depending on how thick or loose you want the dressing to be. Blend thoroughly and chill in a lidded container, before serving this thoroughly refreshing concoction.

Thai Cucumber Salad Dressing
Besides the fact that this recipe will be sufficient for half a dozen tongues, it will also not confine you in the kitchen for more than 12 - 15 minutes. But do not keep it for more than 4 hours. Also, you can have this as the main dish just by tossing in a cupful of cooked baby shrimp. Make sure that you have around you,
  • English cucumber, 1 (cleaned and skinned, you may use 2 field cucumbers if this option isn't available)
  • Scallions, 2 (chopped)
  • Coriander, ½ cup (shredded)
  • Purple onion, ¼ cup
  • Red bell pepper, ¼ cup
  • Peanuts, ¼ cup (roasted and crudely hacked)
As for the dressing, you need to assort,
  • Lime juice, yield of ½ a lime
  • Vegetarian fish sauce, 2 tbsp.
  • Soy Sauce, 1 tbsp.
  • Shrimp paste, ½ tsp.
  • Cayenne pepper, ½ tsp.
  • Sugar, ½ tsp.
Procedure

Blend together the lime juice, fish sauce, soy sauce, shrimp paste, and cayenne pepper. Sprinkle the sugar from top and whisk well, until all the shrimp paste has dissolved.

Then, make a longitudinal slash in the cucumber, halving it in the process, and then cut out numerous longitudinal strips from the two halves. Make ½-inch cubes from these strips, and throw them into a large mixing bowl. Now, add the scallions, purple onions, coriander, and the bell pepper bits to the cucumber cubes, and then add the dressing to these veggies. Use a spatula to mix everything well, and then serve. When you place it onto the serving bowl, make sure that you mizzle the peanuts and a little coriander on the salad for garnishing. Place a slice of lemon as well. If you've made it a little before you plan to eat it, make sure that you re-toss the salad once before you serve.

Japanese Cucumber Salad Dressing
Enhance the joys of eating sushi with this miraculously easy salad dressing with vinegar, which has no harmful saturated fats at all. You will need about,
  • Cucumber, 4 (medium in size)
  • Rice vinegar, 1 cup
  • Sesame seeds, 2 tbsp. (roasted)
  • Sugar, 2 tbsp.
  • Salt, ½ tsp.
Procedure

Start by blending together vinegar, sugar, and only a little salt, thoroughly enough to dissolve the sugar granules and let it stand in the fridge for some time. Now, peel the cucumber haphazardly, in a manner that you allow some intermittent patches and strips of the skin to remain. Half the cucumbers lengthwise, and then use a spoon to scoop out all the seeds at one sharp go. What you'll have at hand are long, half cucumber slices with a central cavity. Now you need to make pretty slim slices of them. Once you have the crescent-shaped cucumber slices as thick as the breadth of a chopstick, place them on tissues to soak up all the excess moisture. Remove the tissues and pour the dressing over them, and toss well. Mizzle roasted sesame seeds from top and servez! You can leave the preparation in the fridge for some time, as some like it cold, while others go for colder.

Greek Cucumber Salad Dressing
Among all the Greek salad dressing recipes, this is one of my most favored recipes. All you'll need to gather for this are,
  • Cucumbers, 3 (cleaned, skinned and cut into tiny cubes)
  • Goat feta cheese, 8 oz. (crumbled)
  • Red onion, ½ (shredded)
  • Kalamata olives, ⅓ cup (sliced)
  • Grape tomatoes, 6-7
  • Mint, 2 tbsp. (fresh and hacked)
  • Lime juice, 3 tbsp.
  • Extra virgin olive oil, 3 tbsp.
  • Provençal herbs or Herbes de Provence, 1 tbsp. (motley of dried basil, fennel, savory, thyme, and lavender flowers)
  • Salt and pepper, to taste
Procedure

In a large bowl, throw in the cucumbers with the cheese, olives, onion, tomatoes, and mint, and mix well. In another vessel, mix the olive oil with the Provençal herbs and the lime juice, and mix until smooth. Pour the dressing onto the veggie mixture and toss. Season with salt and pepper. Your cucumber salad dressing with aromas from the Mediterranean is all ready.

Gurkensalat or German Cucumber Salad Dressing
For this quick and creamy dressing, you must have,
  • Cucumber, 1 (large
  • Red onion, ½ (sliced up)
  • Sour cream or yogurt, ½ cup (you can also mix ¼ cup sour cream and ¼ cup mayonnaise)
  • Salt, 1 tsp.
  • Pepper, to taste
  • Dill, a bit (fresh)
As for the dressing,
  • Water, ¼ cup
  • Apple cider vinegar, ¼ cup (rice wine will also do)
  • Sugar, 2 tbsp.
  • Vegetable oil, 2 tbsp.
Procedure

Start by using a channel cutter to peel out thin sections of the cucumber peel longitudinally, in a manner that you leave a ½-cm gap between each section that you peel. This will leave you with a patterned cucumber, which you can then slice up slimly. Now, place these slices in a glass bowl, and then add salt to it, and toss to coat well. After 60 minutes, drain out the water which will come out of the salt and cucumber. Dry them with a towel.

Move onto mixing together the dressing ingredients real well, and then pour it onto the salted and dried cucumbers. Cake well by tossing, and then use two spatulas to lift the cucumbers from the marinade and transfer them into another bowl. Now, pour in 3 - 4 tablespoons of the sour cream or mayonnaise and sour cream mixture to this, and mix again. Lastly, add the pepper, salt, dill, and onion slices. You can add celery seeds if you like.

If you can find some native German herbs like licorice and pepper-flavored chervil, some borage, and lovage, then nothing like it. Mix them with the veggies, and see the magic.
