Creamy Wild Mushroom Soup
A crockpot is actually a 'slow cooker' used to cook stews and other such recipes that contain water. They are used to cook the food at relatively low temperatures and usually take a longer number of hours. This type of cooking allows the user to leave it unattended. There are a number of cookbooks that cater to various special recipes. Here are a few popular chicken dishes.
With Cream of Mushroom Soup
  • 1 Chicken, 4 lbs.
  • Butter, 2 tbsp. (melted)
  • Salt and Pepper, to taste
  • Cream of Mushroom Soup, 1 can
  • Dry Italian Salad Dressing, 2 tbsp.
  • Cream Cheese, 6 oz. (cut in cubes)
  • Onion, 1 tbsp. (finely chopped)
  • Dry White Wine, ½ cup
Wash the chicken and pat it dry. Then, brush it with butter and add a little salt and pepper. Now, place the chicken pieces in the crockpot. Sprinkle some dry salad mix over the chicken. Cover and cook it on a low flame for around 5-6 hours. Mix some soup, cream cheese, wine, and onion in a saucepan one hour before serving. Cook until it smoothens and then pour it over the chicken. Now, cover and cook it for 30 minutes. Once done, serve it with sauce, rice, and noodles.
With Goya Adobo and Sofrito
  • Chicken, 1 (roaster)
  • Red Onion, 1
  • Cilantro, 4 sprigs
  • Goya Adobo, ½ tsp. (with lemon seasoning)
  • Garlic, ½ tsp. (minced)
  • White Vinegar, ¼ tsp.
  • Sazon Goya, 1 (with cilantro and cumin flavors)
  • Sofrito, 1 tbsp.
Wash the chicken thoroughly after removing the giblets and pat it dry with some paper towels. Place it in the crockpot and sprinkle white vinegar in the cavity. Rub the skin with some adobo and sazon. Use sofrito for the final rub. Peel the red onion and cut it in half. Break the cilantro using your fingers and rinse it well. Then, place the onion in the cavity. Plan and set the time you require to cook the meat. Serve it hot.
With Black Beans and Cheese
  • Black Beans, 1 can (rinsed and drained)
  • Whole Kernel Corn, 2 cans (drained)
  • Salsa, 1 cup
  • Chicken Breast, 6 (skinless and boneless halves)
  • Cheddar Cheese, 1 cup (shredded)
Mix the black beans, corn, and ½ cup of salsa in the crockpot. Add the chicken breasts and pour the remaining ½ cup salsa over it. Cover and cook for approximately 3 hours, until the meat becomes tender. Do not overcook or you will end up with a very dry meat. To make it more delicious, sprinkle some cheese on top and cook again for around 15 minutes until the cheese melts. Serve it hot.
