Chicken appetizers are popular in any party menu, and people of all ages enjoy having them. Though deep-fried chicken tastes yummy, it is loaded with calories. How about trying a recipe that is equally good like fried chicken, but contains less oil? Well, you can bake crispy chicken wings, breast and legs with less effort. For the outer crunchy part, you can use cornflakes and breadcrumbs, with or without flour. Before baking, the chicken pieces are first doused in a liquid, so that the coating mixture sticks to them. Following are some easy baked chicken recipes for you.
Crispy Baked Chicken Legs
  • Melted butter, 2 tbsp.
  • Crushed cornflakes, 1 cup
  • All-purpose flour, 1 cup
  • A dash of cayenne pepper
  • Seasoned salt, 1½ tsp.
  • Egg substitute, ¾ cup
  • Chicken drumsticks, 4 (skin removed)
  • Bone-in chicken thighs, 4 (skin removed)
Preheat oven to 425°F, and pour melted butter in a baking dish (preferably 13-inch x 9-inch size). In a mixing bowl, whisk together cornflakes, flour, cayenne pepper, and seasoned salt. Combine well, and keep it aside. Pour egg substitute in another shallow bowl. Following this, dip a chicken piece in egg substitute first, and dredge in flour mixture. Place it in the already prepared baking dish, with the fleshy side pointing down. For the remaining chicken pieces, repeat the same steps for dipping in egg substitute, rolling in flour base and arranging in the baking dish. Bake for 20 minutes, and turn them. Continue baking for 15 minutes more, or until meat thermometer reads 180°F. You can serve these crispy chicken legs baked to perfection with mayonnaise dip and salads.
Crispy Baked Chicken Breast
  • Boneless and skinless chicken breast halves, 2
  • Egg (slightly beaten), 1
  • Plain breadcrumbs, 2 cups
  • Garlic powder, 1 tsp.
  • Black pepper, ¼ tsp.
  • Chili powder, ¼ tsp.
  • Kosher salt, ¼ tsp.
Directions for Preparation
Prepare a baking sheet by lightly spraying with cooking spray, and preheat oven to 375°F. Clean the chicken breasts by rinsing under running tap. Dab them dry, and cut into bite size pieces. Keep the chicken pieces aside, and start working on the seasoning. Take a mixing bowl, and add the ingredients - breadcrumbs, garlic powder, black pepper, chili powder, and kosher salt. Stir well for even mixing of the seasoning spices. In another bowl, add a slightly beaten egg. Douse chicken pieces in the egg, and roll them in the breadcrumb mixture. Arrange them on the baking sheet, and bake for 15-17 minutes, or until the outer coating turns golden brown and crunchy. Serve with a savory sauce.
Crispy Baked Chicken Wings
  • Chicken wings, 12
  • Soy sauce, 3 tbsp.
  • Sugar, 2 tsp.
  • Paprika, 1 tsp.
  • Cayenne pepper, 1 tsp.
  • Garlic powder, ½ tsp.
  • Salt and freshly ground pepper to taste
Directions for Preparation
Prepare the wings by rinsing thoroughly and removing stray feathers (if any). Cut them in the joints, and discard the wing tips. In a large mixing bowl, combine all the listed ingredients, soy sauce, sugar, paprika, cayenne pepper, garlic powder, salt, and pepper. Stir well, and make sure that sugar is dissolved properly in the concoction. Add chicken in the bowl, and stir with a wooden spatula for coating the wings. Marinade for 2 hours in the refrigerator. In the meantime, preheat the oven to 425°F, and line a baking dish with aluminum foil. Oil the lining with olive oil sparingly, and place chicken wings in one layer. Bake for about 45 minutes, turning once in between (after 25 minutes). Serve warm with your favorite side dishes.
So, serve some crisply baked chicken for a healthy meal menu, instead of serving oil laden chicken dishes. That way you can enjoy juicy meat preserved inside the outer crust, without being too concerned about the calorie intake. As per your taste preference, alter the spiciness and also, consider adding more seasonings. It simply tastes great with sweet and sour sauce, or other dipping sauce.
