Creamy Summer Asparagus Soup

Ingredients
  • 2 cups Fresh asparagus (chopped into thin slices)
  • 1 Onion (finely chopped)
  • 2 tablespoons Flour
  • 2 tablespoons Butter
  • ¼ cup Rich chicken broth
  • ½ cup Milk
  • ½ cup Fresh cream
  • 4 cups Water (boiling)
  • Salt to taste
  • 2 Egg yolks
  • White pepper
Directions

Melt the butter in a big cooking pan. Sauté the chopped onion in the butter until it becomes transparent. Now, add the asparagus slices to it, and continue frying over medium heat until the moisture steams out and the mixture begins to turn brown. Add the flour to the pan and mix it well, so as to coat each piece of the vegetable with it. Let it cook for 4-6 minutes over medium-high heat. Pour some boiling water into the mixture and let it simmer for 40-60 minutes. Strain out all the cooked asparagus pieces. This will leave behind a thin, yellowish-green soup. To thicken it, add the egg yolks and salt to it. Then, add the milk and reheat the soup. Decorate it with fresh cream and some freshly-ground white pepper. Serve immediately.

Cream of Asparagus Soup with Herbs

Ingredients
  • 2½ cups Asparagus spears (chopped in 1-inch pieces)
  • 1 Onion (finely chopped)
  • ½ Turnip
  • 1 sprig of Parsley
  • 1 sprig of Mint
  • 2 stalks of White celery
  • 1 sprig of Thyme
  • 6-8 Peppercorns
  • 6 cups white Vegetable stock
  • 2 tablespoons Butter
  • ½ cup Milk
  • 2 tablespoons Flour
  • 2 tablespoons Cream
  • Salt to taste
  • Clean piece of muslin
Directions:

Put the chopped asparagus, turnip, celery, and onion into a pan, add the vegetable stock to it, and boil the mixture. Tie up the salt, peppercorns, and herbs (parsley, mint, and thyme) in the piece of muslin and place it in this mixture. Boil it further, and then let it simmer for about an hour. Then, remove the muslin from the mixture and make it into a smooth puree in a blender. Melt the butter in another pan and add the flour to it. Blend it well, and cook for 1-2 minutes without letting the color of the flour change to brown. Add the asparagus mixture and muslin puree to it, whilst stirring continuously. Bring the mixture to a boil, and let it cook for 3-4 minutes. Add the milk and fresh cream to it, and reheat it without letting it boil this time. Cook the asparagus tips in salted boiling water until they become tender, and decorate the soup with them.

Cream of Asparagus Soup

Ingredients:
  • 1 bundle of fresh Asparagus (tips chopped in ½ inch pieces, and the remaining roughly chopped)
  • 2 Onions (diced)
  • 8 cups Chicken stock/Chicken broth
  • 1 large Potato (peeled and diced)
  • ¼ cup Flour
  • ½ cup thick Fresh cream
  • 1 tablespoon Butter
  • Pepper and salt, to taste
Directions

Blanch the asparagus in boiling water for half a minute, and then take it out. In a large pan, season the diced onion with butter, salt, and pepper. Sauté it for about 5 minutes, or until the onion softens. Then, add ½ cup of water and the flour to the cooked onion. Add the chicken stock, roughly-cut asparagus pieces, and the potato to it. Heat it over a medium-high flame for 45 minutes. Allow it to cool down. Then, add the fresh cream to the mixture and blend it into a smooth puree. Heat this puree for 7-10 minutes. Garnish it with the chopped asparagus tips.

Creamy Asparagus Soup (Cold)

Ingredients
  • 4 bowls of Cream of Asparagus Soup (prepared above)
  • ¾ cup Milk
  • ½ cup Sour cream
  • 2 tablespoons of Worcestershire sauce
  • Chives to garnish
Directions

Mix all the ingredients, except the chives, in a blender. Blend them until a rich, frothy mixture is formed. Garnish the soup with the chives and serve.
