Cottage cheese pancakes can be either eaten as they are or with maple syrup and chocolate sauce. If you have never tried to make these at home, I would say try these right away! Mentioned below are a few recipes for these pancakes which are tasty as well as filling. Perfect breakfast, I must say!
Pancakes Recipes
As mentioned earlier, these pancakes have one basic recipe and the additional ingredients can be added according to your choice.The calories add up to about 300 per serving and around 15 gms of protein. They are also a good source of calcium as the entire batter is usually made in milk.
Basic Pancake Recipe
  • 1 cup unbleached flour
  • 4 eggs
  • 1 cup cottage cheese
  • ½ cup milk
  • 2 tablespoons sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons canola oil
Take a large mixing bowl and add the ingredients like the flour, baking soda, salt and sugar. Then take another bowl and whisk together the eggs, cottage cheese, milk and oil till it becomes soft and lumpless. Add the flour mixture to the egg mixture, and mix these two again very well with a beater to make a smooth batter. Spray a large skillet with the canola oil and heat it over medium flame. With batches for each pancake, spoon about ¼ cup of batter into the skillet and let it cook for about 5 minutes on both the sides. Once they become golden brown, serve them hot and crispy in a plate and pour some maple syrup over them.
Oatmeal Pancakes
  • 2 cups oatmeal
  • ½ cup cottage cheese
  • 1 teaspoon vanilla extract
  • 4 egg whites
  • ½ cup milk
  • 2 tablespoons vegetable oil
Take a mixing bowl and add all the ingredients in it. Mix them well with either a fork or a beater and add some extra milk to make the desired consistency. Make the batter very soft and make sure there are no lumps in it. Then take a skillet or a pan and add some vegetable oil by a teaspoon. Pour out two tablespoons of batter on to the medium flame heated skillet and let the batter fluff up for 5 minutes. Once the pancakes are cooked from one side, turn them over to get a crispy brown color on the other side. After they are all cooked well, serve them with your favorite topping like chocolate sauce or some extra cottage cheese.
Lemon Pancakes
  • ½ cup whole wheat flour
  • ¼ cup all-purpose flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt
  • 1½ tablespoons sugar
  • 1 large lemon
  • 2/3 cups milk
  • ¾ cups cottage cheese
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lemon juice
  • Fresh strawberries
Take a large bowl and mix together the flours, baking soda and salt. In another bowl, add the rest of the ingredients and whisk them together too. Mix the above two mixture to make one common batter and whisk it all together as to make the batter smooth and soft. Add extra milk in case the batter is not free-flowing. Then add some oil to the pan and heat it over medium flame. When the pan is hot enough, pour batches of batter on it to make circular pancakes. Cook them for about 5 minutes each, till they all become golden brown from both the sides. Once they are ready, serve them with extra lemon juice and top them with fresh strawberries.
