Basic Method
  • Eggs, 5
  • Milk, ½ cup
  • Cornstarch, 4 tbsp.
  • Butter, ⅓ cup (melted)
  • White Sugar, ¼ cup
  • Whole Kernel Corn, 15¼ oz.
  • Cream-style Corn, 14¾ oz.
Preheat the oven to 400° F and grease a casserole dish. Beat some eggs in a large bowl. Add butter, milk, and sugar to it. Whisk in the cornstarch and blend this preparation well. Once you have blended all the ingredients, pour the mixture into the casserole dish and bake it for an hour.
With Pimientos
  • Frozen Corn, 2 pkg. (thawed and drained)
  • Eggs, 3 (well beaten)
  • Sugar, 1 tbsp.
  • Nutmeg, 1 tsp.
  • Butter, 2 tbsp. (melted)
  • Onion, 1 tsp. (grated)
  • Flour, ¼ cup
  • Salt, 2 tsp.
  • White Pepper, ¼ tsp.
  • Light Cream, 2 cups
  • Pimientos, 1 can (drained and chopped)
Preheat the oven to 325° F and grease a shallow baking dish lightly. In a bowl add eggs, corn, and onion. Mix them well. Add sugar, salt, pepper, and nutmeg with flour. Mix them well and stir this preparation into the corn mixture. Add some butter cream and pimientos. Mix this preparation well. Pour it into the prepared dish and place it in the pan. Pour some hot water into the dish and bake this preparation uncovered for at least 1 hour. Serve it hot.
With Cracker Crumbs
  • Creamed Corn, 15 oz.
  • Sour Cream, ¼ cup
  • Milk, 1 cup
  • Frozen Corn, 1½ cups
  • Eggs, 2 (lightly beaten)
  • Spring Onions, 3 (chopped)
  • Cracker Crumbs, 2 cups (crushed)
Preheat the oven to 350° F and lightly grease a baking pan. In a large bowl combine milk, creamed corn, eggs, frozen corn, sour cream, and green onions. Add the cracker crumbs to this mixture. Pour the preparation into the prepared pan. Bake the preparation for 50 minutes or till it turns a shade of golden brown.
With Bell Pepper and Onion
  • Fresh Corn, 2 cups
  • Eggs, 2
  • Salt, 1 tsp.
  • Pepper, ⅛ tsp.
  • Butter, 2 tbsp. (melted)
  • Milk, 2 cups (scalded)
  • Green Bell Pepper, 1 (finely chopped)
  • Onion, 2 tbsp. (finely chopped)
Beat eggs in a large bowl and add milk along with butter to it. Add green bell pepper, corn, onion, and seasonings to this. This preparation needs to be poured into a 1½ qt. baking dish. Set the dish in a pan that contains hot water. Bake this preparation at 325° F for an hour.
