Salads are one of the most delightful accompaniments with meals. Ideal for a warm weather and especially on picnics, they are one of the most common summertime dishes. For some people they are merely a meal ingested for weight loss, but once you understand the basics of it, they can be whipped up in a variety of ways to delight your taste buds. Here are some easy ways to prepare a delicious cold potato salad. Nothing can be more tempting than a big bowlful of it. Once you master the basics, you can simply innovate ways to change the ingredients and prepare a flavorsome dish.
With Mayonnaise
  • Cider Vinegar, 3 tbsp.
  • Mayonnaise, ¾ cup
  • Parsley, ¼ cup (chopped)
  • Mustard Powder, 1 tsp.
  • Garlic, ½ tbsp. (thinly sliced)
  • Fresh Tarragon, 1 tbsp. (chopped)
  • Cornichons, 3 tbsp. (fine chopped)
  • Red Onion, ½ cup (diced)
  • Kosher Salt, 1 tsp.
  • Celery, ½ cup (thinly sliced)
  • Black Pepper, ½ tsp. (freshly ground)
  • Red Potatoes, 2½ lb. (diced)
First, you need to place the potatoes in a large heavy pot. Pour some cold water over it and place the pot on medium heat. Then, cover the pot and bring the ingredients to a boil. Once done, reduce the heat immediately and remove the lid. Then, let it simmer till they become tender. Once done, drain and place it in an ice bath, so that it cools down completely. Use a tea towel to remove the skin by rubbing it with the same. Now, you need to cut round slices of the potatoes. Place them in a zip lock bag. Now add the vinegar and toss it properly, so that it coats the ingredients completely. Once done, place the bag in the refrigerator overnight.
Take a large mixing bowl and combine mustard, Mayonnaise, garlic, parsley, cornichons, tarragon, celery, and onions. Once these ingredients blend well, you can add the potatoes. Use some salt and pepper for seasoning. Chill the dish in the refrigerator for an hour before serving.
With Salad Oil
  • Salt, ½ tsp.
  • Sugar, 1 tsp.
  • Salad Oil, 1 tbsp.
  • Vinegar, 3 tbsp.
  • Potatoes, 6
  • Dill Seeds, 2 tsp.
  • Celery, 3-4 stalks (diced)
  • Mustard, 1 tsp.
  • Onion, 1 (minced)
Take a medium saucepan and cook potatoes in boiling hot salted water. Once they become tender, drain the water, but reserve around ¾ cup. Then, you can dice them. Add oil, celery, and onion. Toss these ingredients gently and combine them well. In the meantime, take a small saucepan and pour ¾ cup water in it. Bring it to a boil. Pour this mixture over the potatoes and onions. Keep it aside and let it cool down to room temperature. While serving, add vinegar, sugar, mustard, and dill seeds. Let it cool down completely before serving.
