Chocolate Pecan Pie
1 unbaked pastry shell (9-inch)
3 eggs (beaten)
1 cup, dark or light corn syrup
1 packet, sweet chocolate
4 oz. semisweet chocolate (melted; cooled)
⅓ cup, sugar
2 tablespoons, butter or margarine (melted)
1 teaspoon vanilla extract
1½ cup, pecan halves
Begin by heating the oven to 350 ºF. Put the corn syrup, eggs, sugar, chocolate, vanilla, and butter in a large bowl, and blend them all together. Add the pecans, and mix well. Pour the mixture into the pastry shell and bake for about 50-60 minutes. Remove and let it cool on a wire rack.
Chocolate Fudge Pie
1 (9-inch) pie crust
1 (14-oz.) can condensed milk (sweetened)
6 oz. chocolate chips
3 tablespoons, nuts (chopped)
Cook the pie crust in the microwave for about 7 minutes. Put the condensed milk in a 4 quart measure and microwave it for about 2-5 minutes. Then, stir in the chocolate chips, until they melt. Pour this into the pie shell, and microwave it for 3 minutes on high. Then, sprinkle the top with the chopped nuts and microwave it again for 2 minutes. Let it stand for around 5-10 minutes and allow it to cool.
German Style Chocolate Pie
1 (9-inch) pastry shell
1 (4-oz.) package of sweet chocolate
14 oz. can, evaporated milk
¼ cup, butter
1½ cup, sugar
2 eggs
⅛ teaspoon, salt
3 tablespoons, cornstarch
1 teaspoon, vanilla
½ cup, pecans (chopped)
1⅓ cup, coconut (flaked)
Whipped cream or topping
Melt the butter and chocolate in a saucepan. Then, stir in the evaporated milk. Add the salt, cornstarch, sugar, vanilla, and eggs to it. Blend the chocolate mixture well. Pour this into the pastry shell. Sprinkle the nuts and coconuts over the filling. Bake for 45 minutes at 375 ºF, or until the top is browned or puffed up. Although at this stage the filling will be soft, it will set later. Allow to cool for 4 hours. Top it with whipped cream.
Silky French Chocolate Pie
1 pastry shell (baked)
2 blocks, unsweetened chocolate (melted)
¾ cup, sugar
½ cup, butter/margarine
2 eggs
1 teaspoon, vanilla
Cream the sugar and butter together. Add the vanilla and melted chocolate to it. Add one egg and beat it for about 5 minutes. Then, add the other egg, and beat for 5 more minutes. Pour this mixture into the pastry shell and put it into the refrigerator. Garnish with whipped cream.
Chocolaty Meringue Pie
1 (9-inch) pastry shell
2 blocks, chocolate
2 egg yolks
¾ cup, sugar
3 tablespoons, cornstarch
3 tablespoons, flour
½ teaspoon, salt
2½ cups, milk
1 teaspoon, vanilla
Put 2 cups of the milk in a bowl and grate the chocolate into it. Place this over hot water to melt the chocolate. In another bowl, blend the sugar, cornstarch, flour, and salt together with the remaining ½ cup of milk. When the chocolate melts completely, add the egg yolks (beaten), stirring constantly. Add the sugar and flour mixture to it. Cook this over boiling water and stir constantly, until it thickens. Add the vanilla, and let it cool. Pour it into the pastry shell.
To make the meringue, beat egg whites until it becomes stiff, then gradually add the sugar. Spread this on the pie. Bake for 7 minutes at 300 ºF.
