On the subject of baking, it is always better to bake cakes from scratch rather than buying cake mix from the market. Making a cake from scratch is not as daunting a task as it may sound, rather it is fairly easy if you maintain precision and proportion with your baking.
Just be sure about the kind of chocolate you use. The chocolate flavoring to your cake can come from chocolate bars bought from a store, cocoa powder, drinking chocolate or even chocolate essence. Every ingredient lends the chocolate cake a different undertone of chocolate and should be used as and how desired. Here are some chocolate cake recipes from scratch.
Chocolate Cake Recipe from Scratch
Ingredients
Chocolate Cake
• All-purpose flour, 2 cups
• Sugar, 1 cup
• Cocoa powder, ⅓ cup
• Olive oil (or vegetable oil), ⅓ cup
• Baking soda, 1 teaspoon
• Vanilla extract, 1 teaspoon
• Pinch of salt
• Butter, for greasing
Method
- In a large bowl, whisk the flour, cocoa, baking soda, sugar and salt.

- Pour in the oil and add vanilla as you keep folding the flour and whisk it until it is very smooth.

- Grease a baking pan using butter, dust its edges with flour and pour the batter in it.

- Bake in a 400º F preheated oven for about 20-25 minutes.
Chocolate and Nut Cake

Chocolate and Nut Cake
• Eggs, 3
• Dark (not too bitter) chocolate, 1 regular-sized slab
• All-purpose flour, 6 oz.
• Sugar, 6 oz.
• Unsalted butter, 6 oz.
• Chopped unsalted nuts (a mixture or any of cashews, almonds, pistachios, pecan, pine nuts), 1 cup
• Cocoa powder, 1 teaspoon
• Baking soda, 1 teaspoon

- In a mid-sized pan, melt roughly crushed dark chocolate.

- In a large bowl, whisk butter, eggs and sugar. Add flour, cocoa powder, baking soda and melted chocolate to it. Whisk to form a smooth batter.

- Fold in the chopped nuts.

- Grease a baking pan using butter, dust its edges with flour and pour the batter in it.

- Bake in a 200º F preheated oven for about 20-25 minutes.
Chocolate Coffee Cake

• Eggs, 3
• Dark (not too bitter) chocolate, 1 regular-sized slab
• Unsalted butter, 14 oz.
• Caster sugar, 14 oz.
• All-purpose flour, 12 oz.
• Brewed coffee, 1⅓ cups
• Baking soda, 1 teaspoon
• Vanilla extract, 1 teaspoon
• Pinch of salt
Method
- In a large sauce pan, mix chocolate, butter, caster sugar and coffee and keep stirring over low heat until chocolate melts.

- Turn off the heat, add eggs and whisk rapidly.

- Combine the flour, salt and baking soda and slowly fold it into the mixture.

- Whisk again until the batter is smooth.

- Grease a baking pan using butter, dust its edges with flour and pour the batter in it.

- Bake in a 350º F preheated oven for about 60-65 minutes.
Chocolate Tea Cake

• Eggs, 4
• All-purpose flour, 16 oz.
• Sugar, 12 oz.
• Unsalted butter, 8 oz.
• Chopped hazelnuts, 6-7 oz.
• Brewed black tea (preferably unflavored), 1 cup
• Breadcrumbs, 3 teaspoons
• Cocoa powder, 3 teaspoons
• Baking powder, 1 teaspoon

- In a large bowl beat together egg yolks, butter and sugar until they combine fully.

- Slowly whisk in the tea. Gradually add in flour, baking powder, breadcrumbs, cocoa powder and chopped hazelnuts while still whisking gently.

- Keep folding until all ingredients have been well incorporated into a nutty but non-lumpy batter.
- In another bowl, whisk the egg whites rapidly, till it stands stiff when pulled up.

- Fold the egg whites into the batter.

- Grease a baking pan or a loaf pan (ideally this cake bakes best in a Bundt pan) using butter, dust its edges with flour and pour the batter in it.

- Bake in a 360º F preheated oven for about 60-65 minutes.
Chocolate Lavender Cake

• Eggs, 2
• Dark (not too bitter) chocolate, 1 regular-sized slab
• All-purpose flour, 15 oz.
• Sugar, 10 oz.
• Low-fat milk, 8 oz.
• Unsalted butter, 6 oz.
• Vanilla essence, 2 teaspoons
• Lavender essence, 2 teaspoons
• Baking powder, 1 teaspoon
• Lavender leaves, a handful

Method
- In a large saucepan, add chocolate, milk, butter and sugar and stir over low heat until butter and chocolate melts and a smooth mixture is formed.

- Remove from heat, add lavender leaves and give it a mix.

- Cover and set aside for about 10-15 minutes for the lavender to infuse.

- Mix the flour and baking powder and sift the mixture. Add it to the chocolate mixture.
- Beat two eggs and add it to the mixture along with vanilla essence and lavender essence.

- Whisk the mixture smoothly to make the cake batter.

- Grease a baking pan using butter, dust its edges with flour and pour the batter in it.

- Bake in a 320º F preheated oven for about 40-50 minutes.
