In a bowl, combine ground chicken, onions, mint leaves, 1½ cups cilantro leaves, ginger and chili paste, cumin, paprika, cayenne pepper, salt, and black pepper together. Chicken Marsala
  • Marsala wine, ¾ cup
  • Butter, softened, 3 tablespoons
  • All-purpose flour, 2 tablespoons
  • Capers in brine, chopped, 2 tablespoons
  • Parsley, chopped, 2 tablespoons
  • Olive oil, 1 tablespoon
  • Sage leaves, 16

Preheat the oven at 350°F. First we will wrap the chicken cutlets with prosciutto. Place 2 sage leaves in each prosciutto slice and wrap it around the chicken cutlets. In a plate, season the flour with salt and black pepper. Coat the cutlets in this flour properly and place on the side. Now heat a skillet and add 1 tablespoon butter in it. When the butter begins to foam, not burn, place 4 cutlets at a time and cook over medium-high heat. Once the cutlets turn golden brown, turn them around and cook on the other side. Place the cooked cutlets in a baking dish, and add 1 more tablespoon butter to it. Place this dish inside the oven, and bake for about 6 to 8 minutes. Meanwhile, add Marsala wine in the skillet. Constantly stir the wine, and add capers to it. Add the remaining butter and simmer till you get the sauce ready. Remove the baking dish out of the oven, and spoon this sauce over the cutlets. Garnish with chopped parsley, and serve.
