Generally, meals that fall under this category are prepared with onions, tomatoes, bell peppers, and some selective herbs. Wine is also added to such dishes to make them aromatic and flavorsome. Mentioned below are some exclusive recipes that will certainly enhance your culinary skills.
With Port Wine and Olive Oil
  • Olive Oil, ½ cup
  • Onion, 1
  • Port Wine, ¼ cup
  • Salt, 1 tsp.
  • Chicken Tenders, 8
  • Garlic Clove, 1 (minced)
  • Tomato Paste, 3 oz.
  • Fresh Basil Leaves, 3
Chop the onion, and cook it in olive oil for 10 minutes on low heat. Then, add the tomato paste with garlic and basil. Pour the wine and add some salt. Boil these ingredients and reduce the heat. Meanwhile, bake the chicken at 350° F for around 20 minutes. Then cut it into pieces and place in a bowl. Pour the sauce over it. Sprinkle the basil leaves over it as garnish.
With Dry White Wine and Bell Peppers
  • Chicken Thighs, 4
  • All-purpose Flour, ½ cup
  • Olive Oil, 3 tbsp.
  • Onion, 1 (chopped)
  • Dry White Wine, ¾ cup
  • Drained Capers, 3 tbsp.
  • Dried Oregano Leaves, 1½ tsp.
  • Basil Leaves, ¼ cup (coarsely chopped)
  • Large Red Bell Pepper, 1 (chopped)
  • Chicken Breasts, 2 (with skin and backbone)
  • Salt, 2 tsp.
  • Garlic Cloves, 3 (finely chopped)
  • Reduced-sodium Chicken Broth, ¾ cup
  • Tomatoes, 28 oz. (dices, with juice)
  • Black Pepper, 1 tsp. (freshly ground)
First, you would need to sprinkle salt and pepper over the chicken pieces. Then, cover them with a light coating of flour. Meanwhile, pour some oil in a large pan and place it over medium-high heat. Put the pieces in it. Cook till they turn a light shade of brown on both the sides. Then, take it out in a bowl and let it rest for some time.
Add garlic, bell pepper, and onion to the same pan. Cook it over medium heat, till the onion becomes tender. Use some salt and pepper for seasoning. Add the wine and let it simmer for around 3 minutes. Add tomatoes with the juice. Along with this, add some of the broth with oregano and capers. Place the chicken pieces back in the pan.
Let it simmer for a while over medium-low heat and let it get cooked evenly. Once done, transfer them to a plate. Continue boiling the sauce and let it thicken for about 3 minutes. Use this sauce to cover the pieces. Sprinkle fresh basil leaves as garnish. Serve it hot.
