However, children may not readily indulge in it, thus, making it important to serve it creatively. Let's take a look at some ways to make celery-eating fun.
Celery and Shrimp Salad
  • 1 cup reduced-fat sour cream
  • 3 teaspoons curry powder
  • 4 tablespoons fresh lime juice
  • 2 tablespoons grated lime zest
  • ½ cup mayonnaise
  • ½ teaspoon salt
  • 2 cucumbers, thinly diced
  • 8 celery stalks, thinly diced
  • 3 pounds fresh shrimp (peeled, deveined, and medium-cooked)
Preparation Procedure

In a large mixing bowl, mix the first six ingredients together. Next, add the remaining three ingredients and toss gently until the vegetables get coated with the dressing.
Light Dip for Celery
  • 2 tablespoons light sour cream
  • 20 chopped green olives with pimento
  • 8 oz. packet of softened, light cream cheese
  • ¼ cup chopped walnuts
Preparation Procedure

In a bowl, combine the sour cream and cheese. Next, add the olives and walnuts. Mix well. Your dip is ready to be served along with celery stalks.

  • Celery stalks
  • Peanut butter
  • 2 small crackers (round)
  • 2 large crackers (round)

Smear peanut butter into the groove present in the celery stalk. This forms the body of the car. Next, pierce two toothpicks at either end of the stick, one on each side. Do the same with the other end. Next, take two small crackers to make the front wheels, and let the toothpick pierce right through them. Use the larger crackers to form the rear wheels. Children love eating their vegetables when they've been transformed into something playful. What's even better, is that since this recipe is so simple, they can prepare it themselves.
Celery Bread Recipe
  • 8 celery stalks, diced
  • 2 onions, diced
  • 2 cup chicken broth
  • 1½ cup butter
  • 4 teaspoons poultry seasoning
  • 1 loaf of bread
  • Salt and pepper to taste
Preparation Procedure

Allow the slices of bread to dry on a piece of newspaper for about two hours. Then, cut them into small cubes. Over medium heat, melt butter in a Dutch oven, and add the chopped onion and celery into it. Cook the mixture until the vegetables become soft. Add poultry seasoning, salt, and pepper. Take the earlier cut pieces of bread cubes and add them to the cooking mixture. Allow the bread pieces to be coated evenly. Pour in the chicken broth and stir well. Dollop the mixture into a casserole dish, and bake it for half an hour at 350 degrees Fahrenheit.
Celery Soup Recipe
  • 1 celery head
  • 2 apples, diced
  • 2 onions, diced
  • 2 cloves of crushed garlic
  • Some parsley
  • 3 cups chicken stock
  • 1 cup milk
  • 2 tablespoons olive oil
Preparation Procedure

Heat olive oil in a large saucepan, and add onions and crushed garlic into it. When it softens, add the diced apple and parsley. Next, pour in the chicken stock and bring the mixture to a boil. Simmer the mixture (for 20 minutes) until the celery softens. Once the mixture cools a little, add some milk. Now, pour this entire mixture into the food processor and pulse chop it. You want the soup to be chunky and not pureed. Pour the mixture into the pan and heat it. Serve the soup piping hot!
