Chocolate

Ingredients
  • Butter, ½ cup (softened)
  • Sugar, 1 cup
  • Eggs, 2
  • All-purpose Flour, 1½ cups
  • Milk, ½ cup
  • Baking Powder, 1 tsp.
  • Vanilla, 1 tsp.
  • Salt, ¼ tsp.
  • Chocolate Syrup, ¼ cup
  • Baking Soda, ¼ tsp.
Method
Preheat the oven to 325° F. Grease the pan and dust it with flour. Remove the excess flour. You could also sprinkle some cocoa powder. Take a large bowl and add cream, butter, and sugar. Beat it till the mixture begins to look a little fluffy. Add one egg at a time and keep beating the mixture. Add all the other ingredients, except chocolate syrup and baking powder, to the mixture. Once these are mixed well, take ¼ of the batter in a small bowl and add the chocolate syrup and baking powder to it, and then mix it well. Add the white and chocolate batter using a spoon, in the greased baking pan. Bake this batter for around 35 to 40 minutes in the preheated oven. Before you take it out from the pan, let it cool for 10 minutes at room temperature. A frosting of fruit syrup or an ice cream topping goes well with it.

Blackberry Jam

Ingredients
  • Butter, ¼ cup
  • Eggs, 2
  • Baking Powder, 1 tsp.
  • All-purpose Flour, 2 cups
  • Cocoa Powder, 1 tsp.
  • Cinnamon, 1 tsp. (ground)
  • Buttermilk, 1 cup
  • Salt, ½ tsp.
  • Allspice, ½ tsp. (ground)
  • Blackberry Jam, 1 cup
  • Sugar, 1 cup (ground and sifted)
  • Granulated Sugar, 1 cup
  • Butter, 1 tbsp. (softened)
  • Vanilla, ½ tsp.
Method
The oven must be preheated to 350° F. Grease the baking pan and dust it with flour. Take a bowl and mix flour, baking powder, salt, cinnamon, cocoa, and allspice. In a larger bowl add ¼ cup butter, cream, and sugar. Blend until the mixture becomes light and fluffy. Add eggs, one at a time to the bowl and beat it well. Add the flour mixture to the cream concoction by alternating it with buttermilk. The first and last part of the addition must be the flour mix. Add the blackberry jam to this. Pour the batter in the pan and bake it in the preheated oven for 45 minutes. Once the cake cools down, you can top it with a thick and smooth mixture made up of powdered sugar in milk, 1 tbsp. butter, and vanilla.

Lemon

Ingredients
  • Butter, 1 cup
  • Sugar, 2¾ cups (¾ cup for glaze)
  • Eggs, 4
  • Lemon Extract, 1½ tsp.
  • Vanilla Extract, 1½ tsp.
  • All-purpose Flour, 3 cups
  • Baking Powder, 2 tsp.
  • Salt, ½ tsp.
  • Milk, 1 cup
  • Peels of Lemon, 1 tbsp. (grated)
  • Lemon Juice, ¼ cup (for glaze)
  • Water, 1 tbsp.
Method
Preheat the oven to 350° F. Take a mixing bowl and add cream, butter, and sugar. Beat until it becomes fluffy. Add the flour, baking powder, and salt to the creamed mix, alternating it with milk. Add the lemon peels to this. Pour this mixture in a floured and greased baking pan. Bake it for 50 minutes. While the cake is a little warm, take another bowl and add the glaze ingredients, which consists of lemon juice, water, and ¾ cup sugar. Mix it well and slowly pour it on the top.
