How to Make Bread Crumbs to Use Them in Varied Crunchy Dishes

Bread crumbs are commonly used for topping casseroles, stuffing poultry, thickening stews, adding bulk to meatloaves, etc. They also give fried chicken or fish, a delicious crunchy coating. It is a good idea to have some of it in storage. In fact, every time there is old bread at home, it can be converted into bread crumbs. Depending on what you are using them for, you may need dry or soft crumbs. The dry ones are usually used to coat food before frying, and the soft ones are usually used as stuffing in a dish.
How to Make Bread Crumbs
  • You can use any white, wheat, sourdough, or rye to make crumbs. You can also use a combination of different breads. Do not use stale ones. To make crumbs, use bread that has dried out. If you don't have any dry ones, you can toast or bake fresh bread to get all the moisture out of it.
  • If you are using a fresh one, first place the slices on an ungreased baking sheet, and bake them in the oven at 300 °F for 10-15 minutes. After about 7-8 minutes, pull out the tray and turn the slices over.
  • Once they cool, break the slices into small pieces, and put them in the food processor. Blend them until they achieve the desired coarseness, depending on what you want to use them for.
Seasoned Bread Crumbs
  • 1 lb (about 500 g) day old bread
  • Pepper, to taste
  • 2 tablespoons, dried oregano or thyme
  • Salt, to taste
  • 2 tablespoons, dried basil or parsley
  • 1 teaspoon, garlic powder
Preheat the oven to 300 °F. Tear up the bread onto small pieces, and put them into the food processor. Grind them till you have coarse crumbs. Then, spread the crumbs in an even layer in the baking sheet, and bake them for 10 minutes. Take out the tray and mix well. Once the crumbs have cooled, pour them back into the food processor. Add all the other ingredients to the crumbs and blend them until it turns to coarse powder. Let it cool and store it in an airtight container.
Italian Style
  • 3 cups, crumbs
  • 1 tablespoon, olive oil (optional)
  • 2 tablespoons, dry milk
  • 1 tablespoon, Italian seasoning
  • 1 tablespoon, brown sugar
  • 1 teaspoon, garlic powder
  • Salt & pepper
  • 2 teaspoons, onion powder
  • 1 tablespoon, dried parsley
Bake the crumbs in the oven till they turn very dry and crisp. Then, grind them in a food processor. You can also put them into a bag and beat them with a rolling pin. Add the salt, dry milk, pepper, brown sugar, parsley, garlic powder, onion powder, and Italian seasoning to the crumbs. It you want them slightly moist, you can add a tablespoon of olive oil to them.
Recipe for Bread Crumbs Stuffing
  • ½ pound, butter
  • ½ cup, chopped fresh parsley leaves
  • 1 cup, chopped onion
  • ½ cup, chopped scallions
  • ½ cup, pine nuts or walnuts (chopped)
  • 1 teaspoon, dried tarragon or sage (crumbled)
  • 6-8 cups, coarse bread crumbs
  • Salt and freshly ground black pepper
Add the butter to a deep skillet and melt it. Then, toss in the onion and sauté the mixture for 5 minutes. Next, put in the nuts until they turn brown. Pour in the bread crumbs and tarragon/sage. Stir well. Reduce heat and add scallions, salt, and pepper; toss them well. Add the parsley. Fill a chicken or turkey with this stuffing and roast the bird.
